putting spinach and cheese into a wonton wrap, pressing, and frying. I am open to suggestions on different kinds of cheese. I just really enjoy wontons, and I really enjoy spinach. Thank you kindly.

I think ricotta is a poor choice and feta could be fairly good... its really as simple as cream cheese.... the same as you make crab rangoon with.

I might even suggest that you mix cream cheese, spinach, garlic, and some finely chopped sun dried tomatoes that were packed in olive oil. That would have a very meditteranean flavor. The feta would taste OK, but would be more difficult to fill the wonton as the filling kind of falls all over the place... I just thought of something else.... using the cream cheese to bind it all together, that way you can also use the feta.

Yum! Try mixing spinach with a ricotta or mascarpone cheese plus a good grated parmesan and adding Italian herbs to the mix. Take your wonton wrappers and flatten them on a slightly floured surface. Put about 1 T of filling in the center of each and brush the edges with an egg wash to help seal them. Fold them over and press with the tines of a fork to make them stick. Place in hot peanut oil and fry until crisp and golden brown.

One filling idea is, to combine spinach, ricotta, grated parmesan cheese, minced garlic, ground nutmeg & salt and freshly ground pepper together. The won ton wrappers should have the directions on the pkg re folding etc. You can fry them in oil, but they can also be steamed. A dipping or over all sauce could be marinara sauce with more fresh-grated Parmesan. Another method of cooking the won ton wrappers - spray muffing tins w cooking spray & push the wrapper into each tin. Spray w a little more cooking spray & fill with any filling of choice and bake at about 350 for a few minutes. Check so they don't burn.

i would use the spinach with some feta cheese, fresh basil, garlic, some browned sausage, and maybe some cream cheese to hold it all together in a food processor until well blended and spoon it into the wontons, then go with jeanette's instructions for cooking!

You know what would be fun that you could do. you could make some sort of mousse. For example, some sort of seafood mousse, like scallop and put a drop of it in your spinach, roll it up, then put that inside your wonton, egg wash and wrap, then deep fry in peanut oil. or maybe you could render some bacon fat, and then in that sautee up your spinach with garlic and shallots. wrap that in your wonton and fry it. or just sautee the spinach in butter, and put small dice bacon in with the spinach in the wonton.

I think feta, sundried tomatoes and spinach are a great combo. Swiss or Gruyere and bacon or pancetta with spinach also rules. The lovely thing about food and cooking is that the combo is only wrong if you find it distasteful-experiment

I would follow Jeannette's instruction and you can modify the stuffing with various kinds of cheese available in your area, for example, Ricotta, Fontina (Italian cheese) , Raclette (Swiss/French) Cheshire (English) or even Cottage cheese if you're health conscientious etc.

Cream cheese will really impress you here. It binds the ingredients really well when fried. Also try adding a cooked sausage if you like.
