I'm a bit of a purist when it comes to hamburgers--ground chuck, make patties (disturbing the meat as *little* as possible. i.e. don't smush it up with your fingers like you're mixing a meatloaf. Just grab a handful of beef and make it into a patty.), lightly salt and pepper and cook. I don't use onion soup, bread crumbs, egg or any of that nonsense. If you're going to do that, you might just as well make a meatloaf. :)
That being said, I have an outstanding recipe for bleu cheese burgers that I found in a cookbook several years ago. We have them once or twice per year, and you MUST grill them. If you fry them, they just don't turn out the same. I mean, they're still good, but not the same as grilling. :) If you decide to make these, I can assure you that you will definitely not be disappointed!
2 lb. ground beef
1/4 cup finely chopped onions
3 tablespoons Tabasco (or other) hot sauce
2 tablespoons honey
1 tablespoon garlic salt
1 teaspoon crushed red pepper flakes
1 teaspoon black pepper
6 ounces blue cheese, cut in 6 pieces
6 hamburger buns, toasted
roasted red peppers (from a jar)
6 portabello mushrooms, grilled
Pre heat grill to med-high heat.
combine beef, onion, hot sauce, honey, garlic salt, red pepper flakes and pepper in large bowl.
mix well.
Divide into 6 portions;form into patties around the blue cheese, sealing well to avoid cheese from melting out during grilling.
Grill 8-10 mins or until done.
Place patties on buns and top with roasted peppers and mushrooms.

Try what I call Fatty Hamburgers. Take your raw burger put it in a bowl, add lots of diced onions, italian seasoning, salt, pepper and garlic powder. Mix thoroughly, make the hamburgers as big as your palm and about 2 inches or so fat. Fry them on medium heat until browned on both sides. Once browned take the burgers out of the skillet (use deep skillet) make gravy either packet or from cream of mushroom soup and a pack or two of brown gravy mix. Make the gravy and then put the burgers back in the gravy and cover and simmer for about an hour or so until done. Serve with mashed potatoes or noodles. It is great.

Here's my standard hamburger recipe:
1 lb lean ground beef
1 pkg Herb and Garlic soup mix
2 T Worcestershire sauce
1/4 tsp salt
1/2 tsp fresh ground pepper
1/4 cup grated parmesan cheese
Mix the above and let sit for an hour to let the flavors blend. Form into 4 - 6 patties and grill. When they are finished, top with Jalepeno Jack cheese. Let cheese melt. If you are more than daring, add a few sprinkles of hot sauce and some pickled jalepenos. Yum!

Very good question.
You can look into meatloaf and meatball recipes, omit the egg because this makes a very sloppy mixture that doesn't grill or fry well, it falls apart, and can slide right through the grill into the fire. But these recipes will give you lots of ideas for taste, in addition to what you get here.
The goal here is to make sure the mix isn't too WET...if you make a mistake you can dry it out with cracker crumbs and this can be delightful if you use different kinds of cracker crumbs like Ritz, wheat thins, or even triscuits instead of plain old saltines. The warning here (all these warnings just for burgers!!) is to watch that your meat doesn't end up too salty.
You can mix meats. In addition to ground beef, you can add some veal, or sausage/pork. Work it together well.
You can add dried soup mixes like onion and mushroom or powdered ranch dressing mix, or beef or tomato boullion powders, or any seasoning packet...you find them by the spices, they are convenient blends of spices ready to add to a lot of different foods.
You can add worstchestsl;aj;lk sal sauce. I give up trying to spell it. But it is really good. I love this stuff to marinate all kinds of beef, like a roast before you put it in the oven or crock pot.
You can add hot sauces like Tobasco or Louisiana Hot Sauce, or salsa (don't add too much liquid).
You can add spices that remind you of other cuisine, such as chili powder for a mexican flavor, or oregano to give you an italian flavor.
You can add other dried spices: mustard, dill, cilantro, rosemary.
You can add seeds and nuts? It would be good with things like sunflower, sesame, almonds, etc.
And then there is always good old minced garlic, onion, and peppers.
After the burgers are done, more than you asked for...you can add different toppings such as different varieties of onions, lettuces, tomatoes, and even strange things from the salad fixings aisle...bean sprouts are a great crunch like lettuce but a very interesting flavor. You can add olives? You can add different kinds of cheeses, and you can serve on different kinds of bread and rolls, try on a bagel, or on french bread or basil and sundried tomato bread.

I mix a little honey, some teriyaki sauce, chopped onions, italian bread crumbs, pepper, and one egg per 2 lbs of meat. It is the best damned hamburger you have to try it. Cook over medium to high heat so you can char the outside, and keep the inside slightly pink. I love it, and came up with it experimenting.

CONEY ISLAND HAMBURGS
2 lg. hamburg
1 egg
Dash of salt and pepper
1/2 c. bread crumbs
SAUCE:
1/2 c. water
1 c. ketchup
1 1/2 c. brown sugar
1/2 tsp. chili powder
1 lg. onion slice
1/2 tsp. lemon juice
1/2 tsp. Worcestershire
1/2 tsp. salt and pepper
Mix hamburg, egg, salt, pepper, and bread crumbs together. Make patties and then brown in pan; set aside. Mix all ingredients together to make a sauce. Heat until it comes to a boil, then add hamburg patties. Simmer about 15 minutes, then serve. Can be frozen.

Hawaiian Sumo Burgers:
Hawaiian sweet rolls or bbq bread
pepper jack cheese
your favorite asian marinade/sauce (used to use Mr. Yoshida's Sauce, but can't find it anymore!)
green bell peppers
sliced onions
pineapple slices (canned or fresh)
Chinese five spice
teriyaki sauce
olive oil
ground beef (or turkey or pork)
put meat into a bowl
add a splash of olive oil
a generous splash of teriyaki sauce
dash (about 1 tbsp. of five spice)
salt and pepper
garlic powder
mix well and form into patties
cut bell pepper into rings; remove pith and seeds
coat lightly with olive oil
slice onion, coat lightly with olive oil
grill the burgers according to your taste.
when the burgers are done, put pepper jack cheese on them to melt a bit. then place the onions, peppers, and pineapple on the grill until warm and a little charred.
toast the hawaiian bread.
assemble your burger: meat, cheese, onions, peppers, pineapple, and the asian marinade/sauce for dipping.
YUMMY!

I fry onions and mushrooms together in alittle butter, and use it to top my cheese burgers...
I also like chili and onions on my burgers.
my favorite of all is the Ranch Burgers, either by mixing the dry ranch seasoning into the meat or just get a bottle of the ranch dressing and pouring onto the burger.

Definitely Worchestire sauce and a little pepper. You'll be surprised how nice it makes the bland burger taste. Works great on flank steak too.

Hey Now...
This may sound funny but
I add a package of (dry) onion soup mix.
It is really tasty and easy.
With Hamburgers cooked on the BBQ it really
tastes great!
