The bible says that God knows all. To God, there is nothing new under the sun.
If infinity is a variable, God is in trouble, because new things are being created that he didn't already know before, that he is having to learn as the universe expands. Since there is nothing new to God, infinity cannot expand beyond infinity.
If infinity is a constant, God is in trouble, because he knows all there is. Knowing all there is, leaves no room for new stuff to occur, since it violates God's no new stuff under the sun condition.
However, new stuff that hasn't happened yet is happening, as expected in a variable infinity.
Does this mean that God is logically impossible?

Your whole diatribe rests on the fallacy that the words of the bible that your argument is based on are fact.
What if those words in the bible are not God's words, or not the truth about God perception.
But, if we accept they are true (though i do not..)..
Then, regardless of what is happening with infinity, then God knows this. It does not mean that new things are created that he didnt already know, just the capacity for new things to be created is expanding, and he will be aware of this too, as should you. Your sentance 'infinity cannot expand beyond infinity' makes no sense, as infinity IS infinite, and cannot be variable or constant, it is either present = infinity, or absent = non-infinity.
If infinity is constant.... sigh. Infinity is neither constant or variable.....it is or it isnt infinity.
Does any of this mean God is logically impossible, no. Does it mean you are confusing most people with your illogical use of big words, Yes.

Yes the Bible does say that God knows all, and he does, any new creations, he knows about already, because he is the creator , of all things, past and future, no, God, will not, ever be in trouble, because he knows all there is to know, and if he decides to create more he will of course know all about that too, if he creates something of course he has to know about it. God's mind is not as simple as ours, he can do anything with it and knowing all there is to know now does not mean that he cannot know all there is in the future , if he knows about it now, which he does ,because he has plans always, he does not need new knowledge because he already has it now even the future knowledge so it is not new knowledge to him in the future, even though it may be to us, it is not to God.So there is no violation as you say there is.It is just like if you plan to do something, you know now what it is and how it will work,so when you make it it is not new knowledge to you because it was planed out before you made it, so you knew it before you made it did you not, if you say you didn't then how could you make it?No God is logically true and possible, it is impossible that he would not be there, otherwise we and everything we know and have could not be either, not only because he made us but he keeps on sustaining us so that we keep living. But your play on words is confusing not only yourself but also other peopleit is your words that are illogical to say the least and do not make sense not the existence of God! Or is it your goal to confuse people into believing that God is the illogical one?

There are various arguments against the biblical concept of god, but relying on infinity is not a good one because nothing in the universe is infinite. Take a look at the references to get a better handle on this.

No, that doesn't mean that God is logically impossible. He doesn't exist, but your argument is extremely weak. You assume that god doesn't know anything that hasn't happened yet, but if he were omniscient then he would know such things. The passage of time wouldn't be an issue.

God knew everything that was going to happen as well. God knows all: past, present and future. We think inside our time constrained universe, but God created time and is outside of it.

noooo, silly. :o) it means God already KNOWS those things are going to happen... and be created.... who do you think inspires mans thoughts to create things? its either satan or God, and God knows satan's plans as well..
i know hes hard to wrap your mind around... and i must say, your question made me think a minute..and my mind spun.... but i think you are thinking too hard. (i do that too sometimes.)
