I ate some of this cake when I was in Mexico and I can not find the ingredients any where.

Mexican/Spanish Cake

INGREDIENTS:
1 1/4 cup cake flour
1 teaspoon baking powder
1 cup sugar
1/3 cup oil
5 eggs, large
1 teaspoon plus 1 teaspoon vanilla extract
1 cup plus 1/2 cup milk
1 cup sweetened condensed milk
1 cup plus 3/4 cup heavy cream
1 tablespoon rum
1 pinch salt

PREPARATION:
Combine flour and baking powder and salt. In a separate bowl, combine the oil, sugar, and 1 teaspoon vanilla extract. Add the eggs to the sugar mixture one at a time until well combined. Stir in the 1/2 cup of milk, then gently fold in the flour mixture a little at a time.
Pour batter into a lightly greased cake pan or baking dish and bake at 325 degrees for 30-40 minutes or until it feels firm and an inserted toothpick comes out clean.

Let the cake cool until room temperature.

Turn it over onto a platter with raised edges. Pierce cake with a fork 20-30 times. Let it cool for an additional 2 to 3 hours.
Whisk together 1 cup milk, 1 cup sweetened condensed milk, 1 cup heavy cream and rum. Slowly pour over cooled cake. Refrigerate for 1 hour. Occasionally, spoon the milk runoff back onto the cake.

In a mixing bowl, add 3/4 cup heavy cream, 1 teaspoon vanilla and 1 Tablespoon sugar. Beat until peaks form. Spread a thin layer over the cake.

Hey Now...

For Tres Leches Cake
my friends GrandMother told me to use:

1 yellow cake mix (with pudding)
baked as directed in 13 by 9-inch pan

Add the topping mixture after poking small holes in
a cooled cake, let soak for an hour or so and
then refrigerate.

For topping mixture:
1 can evaporated milk
1 can sweetened condensed milk
1 pint heavy whipping cream
1/2 cup rum (or to taste)

To finish:
Top off with...
crushed macadamia nuts, diced cherries
and/or crushed pineapple.

I personally like using the combo of
evaporated milk, sweetened condensed milk &
heavy whipping cream
instead of plain old milk...
It is much more "lush"

Spanish Lemon Cake:

55 min 15 min prep
8-10 servings

2 eggs
1 cup milk
1 cup canola oil
1 cup sugar
2 cups self-raising flour
1 lemon, rind of

1. Combine sugar and eggs.
2. Add lemon rind, then oil.
3. Fold in the flour alternatively with the milk.
4. Bake in a 23cm round or similar size square cake tin at 180 degree celsius oven for about 40 minutes or until skewer comes out clean. (I usually make this in double quantity and bake it in a large rectangular pan about 30cm x 25cm.)
5. Check after 40 minutes and see if it needs longer.

SPANISH CAKE

1/2 c. shortening
1 c. sugar
2 eggs, separated
1 3/4 c. flour
3 tsp. baking powder or 1 tsp. soda with sour milk
1 tsp. cinnamon
1/2 c. milk

Cream shortening, add sugar and yolks, beat well. Sift together flour, baking powder and cinnamon and add with milk. Mix well. Fold in beaten egg whites. Use a 9x13 inch pan greased and floured. Bake 40 minutes, 350 degrees. Frost as desired.

You're thinking of Three Milk Cake and the ingrediants include milk, dulce la leche, and cream.

Tres Leche Cake or Three Milk Cake.

It's because its not "Spanish Cake" it's called "Pastel de Tres Leches" or "Tres Leches Cake". It includes evaporated milk, regular milk, and condensed milk. try allrecipes.com you may find it there.
