and what ingradient do we add to the chicken to get its peculiar flavour.

Chicken Bombay Frankie

Ingredients :

Stuffing:

2 chicken breasts
1 bunch green onions, roughly chopped
1 tsp each chopped garlic & ginger
¼ cup Barbeque sauce
½ tsp cayenne powder, or more to taste
½ tsp cumin powder, or more to taste
Salt to taste.
1 red bell pepper - seeded and roughly chopped
Oil for shallow frying
Wrap:

1 pack Chapatti bread (Available from Indian Stores)
Egg white to seal frankies.
Dip:

½ cup Mayonnaise
¼ cup tamarind sauce
¼ cup barbeque sauce
Cut the chicken breasts into strips and saute the breasts in vegetable oil until just cooked through. Cool, then coarsely chop. Place the chicken and all the other stuffing ingredients in a food processor and blend till chicken and all the other ingredients become loosely mixed.

If chapatti came frozen then you need to cook as per instructions on package and allow cooling.

Once cooled cut into quarters and place a teaspoon of stuffing and wrap like you would a regular wrap. Use egg white to seal the closing edge. Once all frankies are wrapped, heat oil in shallow pan and fry all the frankies and drain on a paper towel to remove excess oil.

To serve, mix all dip ingredients together and serve as a side.

Chicken Roll:

Ingredients: 2 boneless chicken pieces
3 tbsp cheese - grated
10 mushroom - cut roughly
1/2 onion - thinly sliced
1/2 tsp green chillies - chopped
1 egg - separated
bread crumbs
oil to fry
salt
pepper
1/2 tsp vinegar
1/2 tsp Worcester sauce


Method: Clean the chicken pieces. Lay out on cutting board. Cover with shrink wrap and beat thoroughly with a mallet. Dribble with vinegar, salt and pepper and keep aside.

Fry onions with little butter on a non-stick pan and add mushrooms and cook until done. When cooled add the cheese, green chillies and Worcester sauce. Form into a tight roll.

Put this onto the chicken piece and roll tightly again. Wrap with the shrink wrap and refrigerate for half hour. Remove from fridge, un-wrap, dip into beaten white of egg and coat with bread crumbs.

Keep aside for 10 minutes. Shallow fry on a non-stick pan turning frequently.

CHICKEN ROLLS

1 1/2 cups cold chopped chicken
1/2 cup sour cream
1/2 cup grated tasty cheese
3 tablespoons mayonnaise
2 tablespoons chopped spring onions
1/4 cup finely chopped celery
1 tablespoon chopped parsley
salt and finely ground pepper to taste

Combine all ingredients and season to taste.
Remove crusts from slices of bread, flatten with rolling pin, butter. Spoon on mixture, roll and secure with a toothpick.

NOTE: Also excellent as a chicken salad.
