Because Catholics believe that the Bible is a book that is open to interpretation and a lot of the stories in the bible are allegorical and metaphorical.
These councils serve to guide catholics in their interpretation of the Bible. After all, priests would know better than lay people as they are theological experts.
For example, the Book of Genesis is a total metaphor. I really don't see how you could have fitted at least two of every land animal in the world into a boat with the proportions given in the bible, as the combined masses of the animals would have been thousands of times the weight of the ark. As one example.
That's what we believe and we are entitled to our beliefs.

Left unchecked, the Ecumenical Movement within the Catholic Church (and its Protestant counterpart, the Emerging Church Movement) could develop into the Great Whore of Babylon, as mentioned in the Book of Revelation.

Because they put the Bible together at the Council of Nicea. They should know :) God is the author, the Catholic Church is the publisher. The publisher should know the contents of what they publish.

Most people prefer to make things up as they go, based solely on their own pre-conceived ideas ... or some preacher's ... and then blame it on the Holy Spirit.
