i like the sauce that's in a lot of chinese food and i would like to make this sauce myself to cook mixed veggies and chicken in it. it's the sauce in chicken and broccoli, shrimp and mixed veggies, shrimp w/ broccoli, and beef w/ mixed veggies.I appreciate the help.

Most Chinese dishes can be prepared by stir frying your chicken, veggies, shrimp, etc in peanut oil with a little bit of sesame oil for flavor, and soy sauce. To get a nice sauce, simply add some chicken stock with a spoon of cornstarch disolved in it, and add it to your food when it's almost done. Stir it until it gets thick.

Haha! That 'sauce' has no recipe ^_^ It's basically cornstarch ^_^ - a staple with those dishes.

After you cook your chicken, veggies or whatever, just add some water mixed with cornflour last. When the cloudy liquid turns clear, that's your 'sauce'. But make sure you've stirfried your garlic and other aromatics before adding the other ingredients in your recipe. That will give your 'sauce' its taste.

Sometimes we cheat by using oyster sauce, though.

Personally I do it this way.

1 cup Chicken stock (packet or fresh doesn't matter)
1 tablespoon Oyster sauce
1-2 teaspoon cornflour
water

Heat Chicken stock
add oyster sauce
mix cornflour and water to form a thick paste
when stock mixture is boiling add cornflour mix and stir untill sauce thickens
add sauce to your Chicken/brocoli or shrimp/vegie mix
stirfry for 1-2 mins and serve

Use oyster sauce. It's in a big brown glass bottle with a red label. It's great.

Chicken with broccoli since it is healthier for you.
