In Japan it takes 5 years to master the art of sushi making, to prepare Fugu you need a licence to even cut or handle the fish. You also need to have a special bucket that is handled by the authoritys to handle and dispose of the innards and bones.

It is illegal to even handle the fish if not a properly trained chef, it is not exported out of Japan even though the fish is widely available around the world, I have tasted it once, when in Japan on business, and now a days is not as popular as once was. They would rather got back to killing innocent whales??

You probably need a degree in culinary arts and need to apprentice under one or more master chefs.
