At Busch Stadium they use a packaged cheese sauce that contains jalapeno peppers and a lot of the time they add the juice that is on the peppers to thin the cheese. Heat the cheese slowly and pour 3 ounces of cheese sauce over the chips. For Nachos Supreme the meat topping is again packaged and it is not the chili without beans but more of the chili base that you buy in the refrigerated section. No water is added.

I haven't had them had ball park, but I think they're either the basic nachos or similar to Taco Bell's Nachos Bell Grande.
What you need are tortilla chips, cooked and seasoned ground meat (optional) and a nacho cheese sauce (I'd make it with Veleveeta). But did you also know they could be made with potato skins? Here, try them-
HALF TIME POTATO NACHOS:
Serves 6 - 8
Ingredients:
5-6 small russet potatoes, washed, not peeled, and sliced crosswise about 1/4'' thick (slices should barely fit between the tines of a fork). Let slices sit in cold water while preparing the rest of the recipe.
2 egg whites, lightly beaten
1 or 2 nonstick baking sheets
Aerosol cooking spray
Your favorite seasoned salt blend, or salt and pepper
Topping Ingredients:
1 cup canned refried beans
2 cups shredded rotisserie chicken (or any leftover cooked chicken, without skin).
1 1/2 cups grated Monterey Jack or Cheddar Cheese
Any or all of the following garnishes
Salsa
Guacamole
Sour cream
Sliced canned black olives
Directions:
1. Preheat oven to 450ƒF. Drain potatoes and pat them dry with paper towels.
Spray baking sheet(s) with cooking spray.
2. Place egg whites in large mixing bowl. Add potatoes and toss them well to coat.
3. Spread potatoes on sheet(s), shaking off excess egg white.
4. Spray tops of potatoes lightly with cooking spray.
5. Bake approximately 13-15 minutes. Use tongs or a spatula to turn the potato slices over after 10 minutes. Note: The potatoes may be baked in batches. However, if you are baking 2 sheets at on time, switch the positions of the 2 sheets midway through cooking time to ensure even doneness.
6. Remove potatoes from oven, leaving them on the baking sheets. Spread each one with a teaspoon or two or of refried beans, then top them with shredded chicken and finally, the grated cheese.
7. A few minutes before serving time, return nachos to the oven and heat 3-4 minutes until cheese is bubbling. Remove from oven, let cool for a minute, and use a spatula to place the nachos onto a serving tray. Top them with any combination of the listed garnishes, or serve them on the side. Remember to provide plenty of napkins!

Recipe: Ballpark Nachos
1 jar Cheez Whiz pasteurized process cheese spread
1 bag tortilla chips
jalapeno nacho slices, drained
Microwave Cheez Whiz as directed on label. Layer 1/2 of the tortilla
chips 1/2 of the Cheez Whiz. Top with jalapeno nacho slices. Repeat
layers.

You can find similiar cheese in a jar in the chip isle. Just heat and pour over your nachos. If you like it spicier buy a small block of pepper cheese and add some shavings to the jar.
If you like nachos with cheese you might like my signature dish. Dump a container of sour cream in a bigger bowl, pour about the same amount of salsa over the sour cream, then sprinkle with lots of shredded cheese. Dip your nachos in and enjoy! YUMMM!

INGREDIENTS
1 (14.5 ounce) package tortilla chips
2 (15 ounce) cans chili without beans
1 pound process American cheese, cubed
1/4 cup jalapenos
DIRECTIONS
Divide chips between six plates; set aside. In a saucepan, warm chili until heated through. Meanwhile, in another saucepan, heat cheese over medium-low heat until melted, stirring frequently. Spoon chili over chips; drizzle with cheese. Sprinkle with jalapeno peppers if necessary.
