Go with both! They go together very well. You can choose all pastels, or a combination of pastels and maybe a few darker/brighter shades. If you're planning a wedding, I highly recommend going to wedding sites for ideas.

use white because you don't want too many colors going on. I think the cornflower and champange nicely compliment each other and anything but white will take away from those colors. These are your main colors right? You don't want an accent color to over-power them and yellow or organe would do just that. White is nice and crisp and can represent the sruft, as someone already stated...or the clouds in the sky. I am sure that your florist will have great ideas to intigrate some splashes of beach-y color into your flowers. Good luck!

Sky blue is far more versatile to any design set-up you want to do
like lilies and sky blue with some nice chrome or silver vases and glass goes well it as well plus if you are looking at bridesmaids dresses i would bet your friends would much rather wear blue then pink plus tuxes will look nice around the decor as well. Congrats and have fun with it if all works well you only do this once.

Sky blue. Pink tends to strictly be a feminine color, where as blue can go either way.

do both put the men in blue the ladies in pink and throw in some white and/or silver to accent; will make a beautiful combo and you can find lots of stuff in these colors so the choices are unlimited.

I like the sky blue idea; blue looks good on just about everybody. Whereas some people just do not look good at all in pink.

I'd pick sky blue, but that's because it's one of my favorite colors!!
