I like a nice sourdough french bread, sliced just shy of a 1/2 inch thick. It can be a little thicker if the bread is soft and airy. You don't wan't your bread to be too dense. I also like to add a little garlic and chile powder.

Just had grilled cheese this evening, as a matter of fact! I used Italian (white) bread but I also like to use rye bread with Swiss cheese, thinly sliced onions and (in season) tomato slices
all piled on topped with a thin slice of good ham, all grilled under the broiler in the oven. That is SERIOUS "yummy in the tummy"!
You might try dark pumpernickel with good Swiss cheese, thinly sliced onion and a nice slathering of whole grain mustard
smeared on just before broiling. Goes 'way beyond the realm
of just a hot sandwich into a great supper, especially with a nice hearty soup to go with it and maybe a nice, flavorful beer or
wine on the side...
Rats! Now I'm hungry again.

Sounds good! I bet they baked it themselves. A lot of restaurants will bake or cook everything from scratch- just like Subway bakes their own buns.
I cannot help you with the bread, but I can give you a tasty way to enhance your basic grilled cheese sandwich:
Instead of just cheese, mustard, and bread, fried with butter on both sides, add some deli meat, pickles, tomatoes, and onions (try and slice them thinly unless you have large slices of bread because all these good things will drip out of your sandwich as you fry it if your bread is too small. Also, besides mustard, add a little mayo too. It's almost like a fried grilled sub or clubhouse- really good with some kind of soup to compliment it with!

Just about any bread, even rye!, makes a really great grilled cheese. It can be topped with tomato, or pickle. Also remember to grill the inside too! butter all 4 sides of 2 slices of bread.
Put both slices face down, and top with the cheese of your choice. Flip one slice on top of the other, then flip all together. I even like mustard or mayo included in my grill cheese.
Ohhhh, I love grilled cheese sammiches. Fried, stewed, barbecued! I don't care what you say, I looove grilled cheese sammiches!!!

That actually depends on your tastes. If you like old-fashioned grilled cheese sandwiches, you'd probably like white bread. There are so many breads and they change the original tastes of grilled cheese sandwiches, if only a little. But basically, it depends on your taste. I don't know what bread you might want to use.

Two of my favorite are garlic and potato bread. The garlic bread is great it adds a flavor and texture that you can not get with regular white bread.

OOOh! I know this one! Big Boy uses Texas Toast. Sourdough is also yummy! Crap! Now I want a grilled cheese and I gots no cheese!!!!! aaaaaaaaaaaggggggggggggghhhhhhh!!!!!!!!!!!

I love a really great loaf of "I-TALIAN BREAD", toasted, with FRESH melted Mozzerella cheese, and slicing pepperoni, garlic, olive oil (oh Popeye), and a touch of Oregano, I ate it tonight, try it, AWESOME !
