I used to work at a bacon factory so I know what they do.also my brother is a butcher.

If you buy cheap bacon from a supermarket it will have been cured in brine and contain loads of moisture. When you try to fry it all the moisture and white scum from the brine comes out.It is not untill you have evaporated this off that it actually starts to fry.I'm afraid it is a result of the consumer always buying cheaper and cheaper and not questioning the drop in quality enough.

My brother who is a real butcher sells 'Dry Cure' bacon. You can get this at the supermarket too, but you will always get better quality and more local produce from a 'real' butcher.
Dry cure is more expensive but you get twice as much because it doesn't shrivell to half the size. And it tastes lovely!

It is the traditional way bacon used to be made.

Do you mean "There's white stuff coming off the bacon, so why doesn't it taste so bad?" If so, the white 'goo' is probablky the fat which melts (some of it) during the cooking process. this is normal and safe, it therefore should taste just fine.

If you're referring to sandwiches from fast food chains that contain bacon, these companies do not fry up fresh bacon on the spot. They use processed bacon that is microwaved. This stuff, in my opinion, is tasteless. Bacon sandwiches you make at home with real cooked bacon should still taste great.

Funny question, but I hope that answers it.

Proof read your question first.

I believe you want fresh bacon. A Farmer's Market, a meat market. Are your best choices, but remember fresh bacon will spoil readily. It does not have the nitrates, nitrites, or salt to preserve them.

The white goo is water mixing with the grease. When the water boils away so does the goo.

Plus remember your taste buds change as you get older.

Is the bacon fresh? I'm not sure is there a difference between American bacon and English bacon?

I find the packaged bacon is full of water and salt and is absolutely disgusting.
I get my bacon only at the farmer's market. It's lean and solid and cooks up nice and flavourful..
