I have no idea what you mean by a "moist to dry dish." But maybe these recipes will help. I don't see why you couldn't add some pepperoni to any of these dishes.
Bolognese Sauce, Olive Garden
4 Tbsp Olive Oil
2 ea Onion, Carrot, Celery stick finely chopped
4 cloves Finely Chopped Garlic
1 lb. Ground Beef
12 oz Skinned Italian Sausage
2 cups Red Wine
36 oz Chopped Tomatoes Crushed (ground)
2 tsp Chopped Rosemary
2 tsp Chopped Sage
Salt (as needed)
Pepper (as needed)
Heat oil in a large pan. Add celery, carrot, onion, garlic and cook gently about 5 minutes.
Add the meat, cook 10 minutes over medium heat, stirring occasionally.
Deglaze pan with wine, let reduce.
Add tomatoes and remaining ingredients, simmer slowly about 1 hour.
Toss and serve over fresh, hot pasta. Serves 8.

Pasta Puttanesca
2 Tbsp. extra-virgin olive oil
4 to 6 cloves garlic, chopped
1 tin flat anchovy fillets, drained
½ tsp crushed red pepper flakes
20 oil-cured black olives, pitted and coarsely chopped
3 Tbsp. capers
1 (32-oz) can crushed tomatoes
1 (14.5-oz) can diced tomatoes, drained
A few grinds black pepper
1/4 cup flat leaf parsley, chopped
1 pound spaghetti, cooked to al dente
Crusty bread, for mopping
Grated Parmigiano Reggiano or Romano, for garnish
Heat a large skillet over medium heat and add oil, garlic, anchovies, and crushed pepper. Saute mixture until anchovies melt into oil and completely dissolve and garlic is tender, about 3 minutes: your kitchen never smelled so good! Add olives, capers, tomatoes, black pepper, and parsley. Bring sauce to a bubble, reduce heat, and simmer 8 to 10 minutes.
Toss sauce with cooked pasta. Pass bread and cheese at the table. Serve w/ salad of baby greens, simple dressed.

Spicy Sicilian Pasta Toss
Recipe #881501 rating
Fast and flavorful weeknight dinner without worring about defrosting. Serve with salad and warm crusty bread. When serving this at a potluck I break up the pasta into 1 inch pieces and serve at room temperature as a salad or side dish.

See if you can locate anyone who worked there, especially in the kitchen. Try a want ad. in the paper, or ask at the paper as they would likely know if that restaurant closed and who the owners were, or the chamber of commerce. The owners might still be around.

Easy Pizza Pasta Casserole (OAMC)
This is a kid pleaser-very cheesy and topped with pepperoni. It makes 2 large (9x13) casseroles or 4 small ones; I often divide it in fourths and freeze 3. This originally came from TOH's Quick Cooking.

2 cups shredded mozzarella cheese (20 oz)
3 1/4 ounces sliced pepperoni
Brown ground beef, onion, garlic and seasoning in oil.
Drain.
Stir in pasta, spaghetti sauce and 3 cups cheese.
Place mixture in 2 greased 9x13x2 inch baking pans or 4 square pans.
Sprinkle with remaining mozzarella.
Top with pepperoni.
Cover and freeze up to 3 months.
To cook now: Bake uncovered at 350 degrees for 25-30 minutes, until heated through.
