Which Church?
The Catholic Church has an Easter Vigil on Saturday evening. They have the Rite of Initiation, which is when new Catholics come into the Church. Some of these people have never been baptized and they are baptized at this time.
But they do not do infant baptisim on Easter Saturday.

By the Catholic church calendar (I'm not too sure about other Christian denominations), Easter Saturday is the Saturday AFTER Easter Sunday... so that would be 6 days later. The day BEFORE Easter Sunday is known as Holy Saturday.
After sundown on Easter Saturday, Catholics hold the Easter Vigil mass. At this mass, adult converts are baptized. Some churchs will baptize older children (8 years old and up) and teens at this service as well, but none younger and certainly no infants.
I'm willing to bet that there are probably a lot of infants baptized in the Catholic Church on Easter Saturday, though, since we don't do any baptisms (outside of emergencies) during Lent.
