Simple Tuna Melts

INGREDIENTS
1 (6 ounce) can tuna, drained
1/2 small onion, minced
pepper to taste
12 slices pickled jalapeno
2 English muffins, split
4 slices Cheddar cheese

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, combine tuna, minced onion, and black pepper. Divide mixture onto 4 halves of English Muffins. Arrange 3 slices jalapenos on each muffin half. Top each with a slice of Cheddar cheese. Place on baking sheet.
Bake in oven for 10 minutes, or until cheese begins to bubble.

TUNA BURGERS WITH HORSERADISH-MUSTARD SAUCE

1 (14-OUNCE CAN TUNA, DRAINED AND FLAKED (I USE WHITE TUNA PACKED IN WATER)
¼ CUP REGULAR OR QUICK OATS
1EGG
1 SMALL ONION MINCED
1 CELERY RIB, MINCED
1 TSP DRIED DILL
½ TSP SALT (OR TO TASTE)
¼ TSP PEPPER (OR TO TASTE)
2 CUPS DRIED BREAD CRUMBS
½ CUP MAYONNAISE
2 TBS DIJON MUSTARD
1 TBS HORSERADISH (OR TO TASTE)
3 TBS VEGETABLE OIL

IN MEDIUM BOWL, COMBINE TUNA, OATS, EGG, ONION, CELERY, DILL, SALT AND PEPPER. MIX WELL. DIVIDE INTO 6 PATTIES ABOUT ½-INCH THICK. DREDGE IN BREAD CRUMBS TO COAT AND REFRIGERATE 30 MINUTES.

IN A SMALL BOWL, COMBINE MAYONNAISE, MUSTARD AND HORSERADISH. STIR TO BLEND WELL. SET SAUCE ASIDE.

IN A WOK, HEAT OIL OVER MEDIUM-HIGH HEAT UNTIL HOT, SWIRLING TO COAT SIDES OF PAN. ADD TUNA BURGERS, EXTENDING THEM UP SIDES OF WOK, AND COOK UNTIL GOLDEN BROWN ON BOTTOM, 4 TO 6 MINUTES TURN AND BROWN ON OTHER SIDE, 4 MINUTES.

SERVE WITH HORSERADISH-MUSTARD SAUCE ON THE SIDE.

Tuna Burgers
These tasty tuna burgers are so delicious. Enjoy!

INGREDIENTS
1 (6 ounce) can tuna, drained
1 egg
1/2 cup Italian seasoned bread crumbs
1/3 cup minced onion
1/4 cup minced celery
1/4 cup minced red bell pepper
1/4 cup mayonnaise
2 tablespoons chili sauce
1/2 teaspoon dried dill weed
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 dash hot pepper sauce
1 dash Worcestershire sauce
4 hamburger buns
1 tomato, sliced
4 leaves of lettuce (optional)
DIRECTIONS
Combine tuna, egg, bread crumbs, onion, celery, red bell pepper, mayonnaise, hot chili sauce, chili sauce, dill, salt, pepper, hot pepper sauce and Worcestershire sauce. Mix well. Shape into 4 patties (mixture will be very soft and delicate). Refrigerate for 30 minutes to make the patties easier to handle, if desired.
Coat a non-stick skillet with cooking spray; fry tuna patties for about 3 to 4 minutes per side, or until cooked through. These are fragile, so be careful when turning them.
Serve on buns with tomato slices and lettuce leaves, if desired.

My favorite tuna sand which as a kid when I was growing up was tuna melts, my aunt made this great tuna melts it had diced up dill pickle diced up onions, mashed boiled eggs, 1 tsp dill weed 2 tbsp mayo and two tsp Dijon mustard, that is two eggs 1 can tuna measurements then she would lightly butter one side of two slices of Seeded Rye Bread put it into a fry pan that has heated on a med low heat between the two slices place two slices of tomato then 1/4 cup tuna spreading tuna evenly over the tomatoes and bread then two slices of cheddar cheese man it was the best

QUICK tuna sandwich

(based on the pre-packaged tuna spread for crackers found in the little snack packs):

...1 (individual-portion) can tuna in water
...1-2 T mayo (or Light)
....2 T sweet pickle relish
....few shakes of onion powder

Really quite good.

I add to one can of tuna drained, 1 tablespoon green relish, 1 tablespoon Kraft Miracle Whip dressing and a little pepper. Mix gently and use as a spread for your sandwich. Chopped sweet onion can also be added, but is optional.

Split & toast English muffins.

Mix drained tuna, mayonnaise, little chopped celery, little diced onion and a chopped pickle, sprinkle of black pepper, curry powder..

Pile tuna mixture on English muffin halves over shredded lettuce. Serve as open face sandwiches.

I take a couple small cans of tuna. Chop up some green onions, olives, and sweet pickles. Put it all in a bowl with a scoop of mayonnaise and mix it all together! YUMMY!!!

If kids are going to be eating it, i would leave out the onions, as most kids dont like them. :o)

1 can solid white tuna (drained)
1 stalk celery (chopped)
1 tablespoon finely chopped onions
1/4 cup blue cheese dressing
3 tablespoons hot pepper sauce (I use Frank's)
1 tablespoon butter or margarine (I use Smart Balance)
1/4 cup crumbled potato chips
2 slices sliced sourdough bread

Mix tuna, blue cheese dressing, celery, onion and 2 T hot sauce together.
Spread butter on each slice of bread.
Spread remaining tablespoon hot sauce on each slice of bread.
Spread half (or more) of the tuna mixture on one slice of bread (use the leftovers for another sandwich).
Pour crumbled chips on top of tuna.
Put the other slice of bread on top.
Note: adjust blue cheese dressing, hot sauce and chips to your taste--these are just estimates.

1 teaspoon of yellow mustard
handful of potato chips
salt, pepper to taste

I also add a little Cayenne pepper to mine.

makes 2 sandwiches.

1 can drained tuna, some chopped onions, 1 chopped dill pickel, 2 hard boiled eggs sliced and BF Mayo, approx 3 heaping tlsp.
