i am in charge of a lunch buffet at work. i've made chicken pot pie,lasagna,taco pie,meat loaf,enchiladas...i'd like to hear some new ideas.thanks

Chicken Casserole

~Just boil a chicken breast and remove all the white meat
~Put a layer of already made stuffing into a casserole dish
~Put a layer of the white meat on top of the stuffing
~Top with Cream of Mushroom Soup
~Bake at 350 for 45min

Easy and delicious!

How bout some
1) Salad with dressings,crouton's,bacon bits,shredded cheese cucumbers exc.
2) Pasta Salad
3) A couple deserts would be good too... like brownies,cake or cobbler

i'm always a big fan of quiche. easy to make - easy to store & serve. there are some good ones - spinach or you could do one w/ jack cheese and chili peppers if you want a little spice. oh! i also have a recipe i love - used to be served in a restaurant i worked at - london broil sliced into bite size pieces served over corkscrew pasta and topped with grated cheese, black olives, artichoke hearts, diced tomatoes, diced avocados - really anything you want to serve on a salad and they can top it w/ any salad dressing they want (although i prefer ranch). have fun!

Roast beef with carrots, southern seasoned green beens, a decent hot buttered biscuit, corn, squash/onions, mashed potatoes with gravy, sweet potatoe casserole and a few fruits and pie choices.

you have lots of "main" dishes, but i think you should add bread, salad, and something to go with all the meat you have (such as mashed potatoes / vegetables)

and, have a desert - it can be simple like brownies or pudding

and drinks! just buy soda bottles and keep water bottles there too

well salad is a good start but mix it up a bit...baked ziti...corn is easy...chicken parm...baked potatoes...there's so much u can do just think the easier the menu the less time u will have preparing stuff and the more time u will have relaxing and munching out!

I'd throw in a Salad, pizza bites, fried mushrooms, chicken fingers, and pasta salad.

How about a baked potato bar? Include anything and everything for toppings! Chili, cheese, chives, onions, sour cream, butter...mmmmm

you should start with appetizers, if your allowed that.
then i think it would be a good idea to have little finger sandwiches.
the always go good with buffets with alot of people.
