Jen's Low Fat High Fiber Bran Muffin
This makes 2 dozen regular or a lot of mini! (I made 1 dozen regular and 2 dozen mini.)
2 dozen 25 min 10 min prep
3 cups unprocessed wheat bran
1 cup boiling water
1/2 cup brown sugar
1/2 cup Splenda sugar substitute
1/4 cup olive oil
1/4 cup unsweetened applesauce
2 1/2 cups whole-wheat pastry flour
2 teaspoons baking soda
1 teaspoon salt
2 eggs
2 cups skim milk
1 tablespoon white vinegar
Put 1 cup of the wheat bran in a bowl with the 1 cup of boiling water.
Stir and let it sit until the water is absorbed.
In a large bowl put the flour, the baking soda, and salt.
Combine the sugar, splenda, oil, and applesauce.
Add the sugar mixture to the flour along with the wet bran and the remaining 2 cups of bran and the 2 eggs (that you have beaten).
Combine the milk and the vinegar (let sit for about a minute) and then add this to the flour mixture.
Mix until totally combined.
Put into muffin pans you have sprayed with cooking spray.
Cook for about 15 minutes or until done.

A "most requested” breakfast recipe. If refrigerated, the batter will keep 5 weeks (cool!) Preparation Time: Approximately 20 minutes. This breakfast recipe will result in 12-16 muffins depending on your pan.
Ingredients:
4 1/2 cups Kellogg's Original All Bran
(DO NOT TRY FLAKES. This is the ONLY cereal that works)
1 1/3 cups boiling water
3 cups buttermilk
4 eggs
3/4 cup canola oil
3 3/4 cups flour
2 1/4 cups sugar
3 3/4 teaspoons baking soda
3/4 teaspoon salt
Instructions: (Follow precisely please)
Preheat oven to 400 degrees F
Combine and stir well the All Bran and boiling water
Let stand
In another bowl, combine the buttermilk, eggs and oil, then add the sugar
Combine and sift together the flour, baking soda and salt
Combine All Bran mixture and liquid ingredients
Add flour mixture and stir just until flour is incorporated (Do NOT over mix or the muffins will not have the right texture)
Bake in greased muffin pan in pre-heated oven at 400 degrees F for 18-20 minutes
Make CERTAIN your oven temperature is correct or muffins
will not bake right. To test for doneness, insert a toothpick.
If it comes out “clean,” your muffins are done.

High Fiber Apple Pumpkin Bran Muffins recipe
High fiber and fruit muffins. I have IBS and am interested in healthy living so this is the recipe I came up with. They are dense but moist. You can add raisins too if you want. Great warmed with some Celeb butter (canola and olive oil) or even cream cheese :)

Ingredients
2 cup Soy milk 2 1/2 tablespoons Baking powder
2 Egg 1 cup Canned pumpkin
10/27 cup Honey 2 Apple grated
10/27 cup Olive oil 1 cup All-Bran cereal
2 cups Oat bran 5/6 pound Prunes chopped
2 cups Whole wheat flour 3/4 cup Oatmeal
1 teaspoon Salt
Directions
Preheat oven to 350 degrees.
Mix wet ingredients together, add oat bran.
Mix dry ingredients together in seperate bowl.
Add dry mix slowly to wet mix and stir very well.
Fill greased or lined muffin tins 3/4 way full with batter.
bake for 12-15 minutes or until a toothpick inserted comes out clean.
Try one while still warm. Bakers bonus :)

The Very Best Bran Muffin!
INGREDIENTS
1 1/2 cups all-purpose flour
3/4 cup ground flax seed
3/4 cup oat bran
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
3/4 cup skim milk
2 eggs, beaten
1 teaspoon vanilla extract
2 tablespoons vegetable oil
2 cups shredded carrots
2 apples, peeled, shredded
1/2 cup raisins
1 cup chopped mixed nuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease muffin pan or line with paper muffin liners.
In a large bowl, mix together flour, flax seed, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon. Add the milk, eggs, vanilla and oil; mix until just blended. Stir in the carrots, apples, raisins and nuts. Fill prepared muffin cups 2/3 full with batter.
Bake at 350 F (175 degrees C) for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

I have one passed down to me by my mother-in-law that's good in several ways. The muffins are really moist and tasty, and they can also be held for a long time in the frig, then later baked a few at a time whenever needed:
CHA’s REFRIGERATOR BRAN MUFFINS (35-40 med. muffins)
1/2 c sugar (or 1 c honey)
1/2 c solid shortening (Crisco, etc.)
2 eggs
2 1/2 c unsifted flour
2 1/2 t baking soda
1/2 t salt
2 c buttermilk (or 2 c milk + 2 2/3 T vinegar; let sit 5-10 min)
2 c “100% Bran” cereal
1 c boiling water
1 c “All Bran” cereal
3/4 c raisins
…cream sugar & shortening thoroughly
…add eggs one at a time, mixing well after each
…add flour, baking soda, salt and buttermilk, mixing till smooth
…pour water over 100% Bran cereal…let stand till absorbed & cooled slightly …blend into batter
…add raisins + All Bran cereal, then mix thoroughly
Bake now…(or refrigerate tightly-covered, and bake later)
…dip batter from container, WITHOUT stirring, into greased muffin tins (or paper muffin cups)
…bake at 400 F for approx. 20 min, or until done
…let stand 10 min. before removing from tins
(can freeze any muffins not eaten, then reheat in microwave or oven)
(can keep batter in frig. for at least 2 weeks, then bake few at a time any time later… recipe can be doubled)
P.S. You might want to check out other recipes online that use one or more of the "bran" only cereals... they may not taste that great as cereal, but are wonderful broken down in muffins! Here are some:

I don't know about the fiber, but this one is healthy and I think lots of fiber. Buckwheat is high in protein.
Three-b (buckwheat, Blueberry, and Butternut ) Muffins
These muffins are chucked full of things that are good for you.
12 muffins
50 min 25 min prep
nonstick cooking spray or 12 paper baking cups
1 1/3 cups flour
3/4 cup buckwheat flour
1/4-1/3 cup sugar or Splenda sugar substitute
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs, slightly beaten
1 cup mashed cooked butternut squash
1/2 cup milk
2 tablespoons cooking oil
1/2 teaspoon finely shredded orange rind
1/4 cup orange juice
3/4 cup fresh blueberries or frozen blueberries
1/4 cup rolled oats (Oatmeal)
1. Preheat oven to 400 degrees; Spray twelve 2-1/2-inch muffins cups with nonstick spray or line with paper muffins cups; set pan aside.
2. Combine, flour, buckwheat flour, sugar, baking powder,cinnamon,baking soda and salt in a medium mixing bowl;make a well in the center of flour mixture; set aside.
3. In a mixing bowl;Combine the eggs, squash, milk, oil, orange peel, and orange juice; Add the egg mixture all at once to flour mixture, stir until just moistened (Batter should be LUMPY), fold in Blueberries.
4. Spoon batter into the prepared muffin cups, filling each almost full; sprinkle with oats.
5. Bake for 15 to 20 minutes or until the muffins are light brown: cool in muffin cups on wire rack for 5 minutes, Remove from muffins cups; serve warm, Enjoy.

1 c. High Fiber dry cereal
1 c. all-purpose flour
1/2 c. brown sugar
1 tsp. baking soda
1/2 tsp. orange peel
1 teaspoon brown sugar
1 teaspoon cinanmon
1/2 tsp. nutmeg
1/4 tsp. salt
1/2 c. canola oil
1 egg
1 can apple pie filling
1/2 cup sugar free apple jam
Preheat oven to 400 degrees. In large bowl combine dry ingredients. Add oil, egg, and strawberries, and jam. Fill muffin cups 3/4 full. Bake 15-20 minutes.
Chunkey Monkey Bran Muffins
2 c. 100% bran cereal
1 1/4 c. skim milk
1 c. all-purpose flour
1/3 c. packed brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 c. reduced calorie butter
1/4 c. egg beaters
1 cup mashed bananas
1 tbs. vanilla extract
3/4 cup walnuts (or pecans)
Combine bran and milk; let stand 5 minutes. Combine next four ingredients; set aside. Mix butter and egg into bran mixture. Stir in flour mixture until blended. Stir in bananas, vanilla, and walnuts. Spoon into 12 Pam sprayed 2 1/2 inch muffin pan cups. Bake at 400 degrees for 18 minutes or until done. (You may add raisins or nuts to batter.)
**here are some more high fiber recipes i thought i would share:
Berry Berry Crisp (6 grams fiber)
1/3 cup sugar
1/2 cup plus 2 Tbsp. flour, divided
2 cups each sliced strawberries, blueberries and raspberries
5 honey graham crackers, coarsely crushed (about 3/4 cup)
3/4 cup quick-cooking oats
1/2 cup firmly packed light brown sugar
1/4 cup Sliced Almonds
1 tsp. ground cinnamon
1 Tbsp. butter, melted
1 Tbsp. canola oil
1 Tbsp. water
MIX sugar and 2 Tbsp. of the flour in large bowl. Add berries; toss to coat. Place in 13x9-inch baking dish.
MIX remaining 1/2 cup flour, crushed grahams, oats, sugar, almonds, cinnamon, butter, oil and water. Sprinkle evenly over berry mixture.
BAKE at 375°F for 35 to 40 minutes or until lightly browned. Cool slightly.
HIGH FIBER CHOCOLATE CHIP COOKIES
2 sticks butter
1/2 c. white sugar
1/2 c. brown sugar
1/3 c. cocoa
1 tsp. vanilla
1 1/2 c. whole wheat flour
1 tsp. baking powder
3 c. old-fashioned oats (not quick cooking)
6 oz. chocolate chips
2 eggs
Beat butter, sugars, cocoa, vanilla and eggs.Add whole wheat flour and baking soda.Mix in oats and chips.Drop by tablespoon onto ungreased cookie sheets.Bake at 350 degrees for 7 minutes.
