A good gun you say, Iv always been a fan of webbley&scott so there for i would suggest the webbley stingray.
Whierack have always lived up to expectations and
the logan sweet16 is also a good choice .

Have a look on the second hand market rather than new guns. I used to be into field target shooting and for pure accuracy I would always aim for a precharged pneumatic rifle but these are expensive and to see that somebody like yourself wants to use a spring rifle actually fills me with joy. I have a Feinwerkbau sport (break barrel springer) and it is a wonderful gun, but there are better guns. The Air arms tx200 (underlever) was regarded as being the best spring powered air rifle for a long time and I would suggest one of these (if you can find one) or the weirarch (I forget how to spell it correctly) hw77 that dominitated the market before precharged guns became popular.

As for break barrel guns, The Feinwerkbau sport is superb, but the Weirarch HW80 is better and anything made by Theoben will have a gas ram instead of a normal spring, these guns are amazing in both quality and performance, but they do cost more.

Do a google search for "blackpool air rifles" and "target sports bolton" those companies sell second hand and new guns and they will give you a price guide.

Keep in mind that if you go for a bigger scope (over 16x zoom) it may be designed for firearms rather than air rifles. Spring powered airguns can have a far greater destructive force on a scope than a firearm.

Stay away from cheap imported guns from eastern euroupe or china. Aim for German or English (even if you decide to buy new)guns (In my opinion the German ones are better) and plan on replacing the main spring if you do buy a second hand gun. Keep in mind that accuracy is more important than getting 11.9 foot pounds out of a gun. I really hope you find a good gun and enjoy using it.

If I had £300 to spend I would buy anything by theoben or venom (a tuning company for air rifles) and save up later for a decent scope.

I've got a Weirauch HW80K .177 (carbine barrel) and it's amazing. It's known as the workhorse.
