Crockpot Chicken and Dumplings:
NGREDIENTS:
* 1 potato, peeled and chopped
* 3 carrots, sliced
* 1 onion, chopped
* 14 oz. can chicken broth
* 1/4 cup flour
* 1/2 tsp. salt
* 1/2 tsp. dried thyme leaves
* 1/8 tsp. pepper
* 2 lbs. boneless, skinless chicken thighs, cut into 2" pieces
* 9 oz. pkg. frozen baby peas
* 1-1/2 cups baking mix OR Homemade Baking Mix
* 1/2 cup milk
PREPARATION:
In a 3-4 quart crockpot, mix potato, carrots, and onion. In medium bowl, combine chicken broth, flour and spices and blend well until smooth. Pour over vegetables in crockpot. Add chicken. Cover crockpot and cook on LOW for 6-8 hours until chicken is thoroughly cooked and no longer pink in center. Add peas and cover again. Cook on HIGH for 20 minutes until peas are hot.
In small bowl, combine baking mix and milk and mix just until combined. Do not overmix. Drop by tablespoons onto hot chicken mixture in crockpot. Cover and cook on HIGH for 20-25 minutes until dumplings are cooked through, are fluffy, and a toothpick inserted in center comes out clean. Serves 4

1 1/2-2 lb. ground chicken
3 slices bread crumbs
1/2 med. onion
1/3 c. ketchup
2 eggs
2 tbsp. A-1 steak sauce
Season to taste
Mix together and bake in 350 degree oven for 1 hour.

Chicken and dumping are easy
Dice - literally dice size - chicken - I use about 2 breasts
boil in about 8-10 cups of water which I season with pureed onion because my son does not like onion (only if he can see it) and pureed garlic - 2 cloves with salt and pepper to taste, sometimes I add a little poultry seasoning like a teaspoon. I also throw in a chicken bouillon cube to help with the flavor
Once the chicken is done mix up some JIffy mix according to the dumpling recipe on the box and then drop by teaspoon full into the boiling broth and chicken. Cook till it thicken up, about 10 min.

Best, kid-friendly, healthy, good tasting meatloaf EVER.
Meatloaf Florentine
3 lbs. Ground meat (I use one pound each of turkey breast, buffalo, and pork)
(the idea is to use very lean meats and use the olive oil and veggies for the moisture, healthier).
1 medium onion, finely diced
1 large clove garlic, minced
6 oz roasted tomatoes (or sun-dried packed in olive oil) with the olive oil
1.5 cups chopped fresh spinach
1/2 cup chopped fresh herbs (mostly basil, plus some rosemary, thyme and sage)
2 eggs
1 cup bread crumbs
1/2 cup grated parmesean (not the stuff in the green can, okay?)
2 tbs. olive oil
1 tsp kosher salt
1/2 tsp ground pepper
4 tbs. Ketchup
and a pinch of red pepper flakes if your little one likes spice (mine does)
Saute onion and garlic in olive oil til soft and light golden. Mix all ingredients together and divide in half. Place in two loaf pans. Bake at 350 degrees for 60 minutes, make sure a meat thermometer inserted into the center reads 180 degrees.
Makes two loaves.

Meatloaf:
2 eggs
Itialian bread crumbs
1 to 2 lbs hamberger
Favorite seasonings
1 to 2 cans Cream of Mushroom soup
In a large bowl, empty egg whites and yolks whisk well. Add hamberger and 1 cup of itialian bread crumbs. Mix with hands, if texture is still very wet add more bread crumbs until the mixture is just slightly wet. Empty into baking pan and put into a 350 degree preheated oven and bake for 30 minutes. Pull out pan and drain off any grease and put back into oven for an additional 15 to 30 minutes. (no red in juice) Last 5 minutes add 1 to 2 cans of cream of mushroom soup.

dont use canned biscuits.... boil either a whole cut-up chicken or if you prefer just legs and thighs.enough water to cover and add an inch. while chicken is boiling; add either a can of chicken broth, or a couple of bouillion cubes, a 1/2 stick of butter, salt and pepper to taste. when chicken is done let cool and pull meat from bones. i use bisquick but i make my dumplings with the biscuit recipe. just roll them around 1/4 to 1/2 inch. cut into 1x1inch strips. bring your broth to a boil, drop dough into broth, turn down heat and let simmer for ten minutes, add chicken and cook for 5 more minutes. taste once more to make sure the salt and pepper is at your liking.enjoy

"This is our family's very favorite comfort food."
Original recipe yield:
4 -6 servings
INGREDIENTS
2 (10.75 ounce) cans condensed cream of chicken soup
3 cups water
1 cup chopped celery
2 onions, quartered
1 teaspoon salt
1/2 teaspoon poultry seasoning
1/2 teaspoon ground black pepper
4 skinless, boneless chicken breast halves
5 carrots, sliced
1 (10 ounce) package frozen green peas
4 potatoes, quartered
3 cups baking mix
1 1/3 cups milk
DIRECTIONS
In large, heavy pot, combine soup, water, chicken, celery, onion, salt, poultry seasoning, and pepper. Cover and cook over low heat about 1 1/2 hours.
Add potatoes and carrots; cover and cook another 30 minutes.
Remove chicken from pot, shred it, and return to pot. Add peas and cook only 5 minutes longer.
Add dumplings. To make dumplings: Mix baking mix and milk until a soft dough forms. Drop by tablespoonfuls onto BOILING stew. Simmer covered for 10 minutes, then uncover and simmer an additional 10 minutes.

There are so many it is basically preference when it comes to meatloaf. I use beef and pork mixture, to that I add onions, when I'm in the mood, some bell peppers, bread crumbs, couple of eggs, dijon mustard, horseradish sauce, ketchup, salt, pepper, maybe some celery at times, parsley, spices to taste, etc. All in personal preference.
As for the chicken and dumplins, I make my own bread dough fresh that morning. I parr boil my chicken to get the liquid, then finish baking in the oven to crisp. Meanwhile, heat the chicken broth liquid to boiling and drop in balls of dough- not too many at a time. Cook ten minutes with lid on- then ten minutes with lid off!
When you're done with the dumplins which can be kept warm in the oven, add the remaining juices from the oven dish from the chicken and make your sauce, gravy, whatever you want to call it.
I like mine with butter! You just made me hungry for them so tomorrow looks like a chicken and dumplin night!!!!!!!!!

1 and 1/2 lbs ground round 1 and 1/2 lbs ground turkey, 1 package onion soup mix and 1 package hidden valley ranch dressing mix, 1 cup progresso italian style bread crumbs, 2 dashes worchestershire sauce, 1/2 cup milk, 2 eggs, 1/2 package of fancy shredded swiss cheese, kosher salt or sea salt, cracked black pepper, and some minced garlic. Mix together and place in pan. 350 degree oven until almost done take out and put favorite spagetti sauce on top and some mozzerella cheese. Finish it off in the oven. My family loves this recipe!

Ok you get your meat. I like to combine beef and veal. Add some chopped up onions and peppers after you saute them, some egg, some bread crumbs, some red wine and worchestershire sauce. Mix it up with your hands.
Lay half of the mixture down on the pan Get some cheddar cheese and cover the meat with a layer of it. Then layer frozen tater tots over the cheese. Then another layer of cheese, then top off with the rest of the meat. Baby you got a meal goin!

Meatloaf: 2lbs of hamburger, medium onion, one sleeve of Ritz crackers, 1 can tomato paste, 1 can tomato sauce, salt and pepper to taste. Bake 30 mins @ about 350.
I put ketchup on top.
