One of the main function of Blood is to carry oxygen from lungs to other body parts in Red blood cells. It is possible because a substance by the name of Hemoglobin binds Oxygen.

Iron is an important part of hemoglobin (Hb) and is needed for it's formation.

So iron deficiency will cause decrease in Hb & hence decrease the oxygen carrying capacity of blood, which is anemia. Though anemia can also occur by other mechanisms, but iron deficiency is the commonest.

By definition, anemia is the result of insufficient iron in the hemoglobin. Because iron carries oxygen inside the blood, lack of it will lead to insufficient oxygen levels. Lack of sufficient oxygen leads to all sorts of bad things.

Anemia can also be caused by not having enough of other types of nutrients which allow the body to correctly metabolize the iron. This is a far more complex interaction and few doctors will diagnose this.
