Short answer: Yes.
Longer answer: It depends on what you mean by "spirit animal". Do you mean a totemic animal whose nature represents and is tied to your very essence? Or do you mean a spirit guide theat acts as a facilitator on certain levels of reality, but is not bound to you (or you to it) in the same way.
I've done a bit of work with my own totemic animals (using the above definition); I realize that my using the term might anger some Native Americans, but honestly, I'm not sure what else to call them. It is my opinion, based on those experiences, that my own totemic animals will not change because their qualities are representative of the essence of who I am. I've never had a spirit guide other than them, but from talking with others I get the impression that spirit guides come and go as the wish takes them and as they are needed (or cease to be needed) by the individual practitioner.

You mean spirit guides? Yes, they can and often do... when you no longer pay attention to one, they can leave you, or if YOU don't need that particular one anymore they will change as necessary to continue to teach and guide you according to your ability.
