I am trying to roast my potatoes in the oven tonight along with my chicken. However, I never understood if your supposed cook the potatoes first or just have bake them uncooked. LOL. Never made this before, sorry if the question seems stupid.

the potatoes will take about 40 min on 375 so it depends on what kind of chicken (size and whole or cut up) you are baking and how long it will be in. You can always pre-bake the potatoes for 30 min set aside and finish them with the chicken for the last 15-20 minutes or so. Or microwave them.....

Put the potatoes into the roasting pan raw along with the chicken. The potatoes only need 45 to 60 minutes so depending on the size of the chicken you may have to put the potatoes in after the chicken is started.

For perfect roast potatoes, boil them for ten mintutes, then drain the water off. Leave the lid off for a couple of minutes, to let them dry out a bit then put the lid back on and give them a really good shake so they are all fluffy on the outside. Meanwhile, heat some lard (about an ounce) in a baking tray in the oven, When it is smoking hot, carefully put the potatoes into it and baste them thoroughly. Turn them over a couple of times while cooking them for about an hour or until they are crisp. Yum!

You can bake the potatoes in their skins outside the pan you are roasting the chicken in (wrapped in foil or not); or you can peel and slice them and roast them right along side the chicken in the same roasting pan. The juice and fat from the chicken give the potatoes a wonderful flavor if you roast them along with. I like to put my potatoes in the micro for a few minutes before baking/roasting to speed their cooking.

Select even sized potatoes peeled or washed. Quarter toss in oil salt and pepper.
Will take about 20 minutes.
Boost the heat to about 210% after removing Chook to rest

uncooked. you can do them whole or cut them into halves or quarters.

Don't wrap them in foil, you want them to suck up all the yummy juices.

For a super easy meal, throw in some halved, peeled onions and some carrots, then you have the whole meal in one pan.

poke a couple fork holes in them and wrap them really tight in aluminum foil, the thick kind is best, put them in while oven is heating, and they should be done by the time the chicken comes out in a hour,
