I have a 14 week old american eskimo and we're not sure what to do about grooming, we try and brush her every couple of days so she gets used to it but we heard mixed things about giving them baths. Some people say once a month other people say the less is better because it dries them out. We would also like to know about trimming their hair, we aren't looking to show them but we want to keep them clean any tips? thanks!

If you're taking him to a professional groomer, and keeping up with maintenance (like brushing and combing) at home, you can have him bathed as often as you'd like based on need. If high-quality products are used, the coat is well-rinsed, and properly dried and brushed out, the bathing will not dry out the skin or coat.
As for the haircutting ... you have options. You should choose a haircut style based on what you feel you can reasonably keep up with. If you're willing to do some brushing at home, and willing to bring him in regularly to be professionally groomed (about every 4-8 weeks), then you can keep him full-coated with some minor trimming (feet, rear end, under tail, by genitals), as the breed looks in its breed standard. For those who can't (or won't) keep up with the dog's grooming needs as well, perhaps a shorter clip would suit him more. Your groomer can give what is often called a "puppy cut" ... this means different things to different groomers, so don't toss the term around without getting further details from the groomer ... but to ME, that means one length of hair all over (ranging from very short, to moderately long ... I'd say 1/8" to 2"), usually having the tail and head area scissored to show balance and symmetry while maintaining a cute look, overall. Another option is what is called a "lion clip", which leaves your dog with a fuller mane, pom on the end of the tail, some hair on the feet/legs, but a close cut everywhere else. A good groomer will have pictures of different types of haircuts on different types of dogs on-hand for you to look through.
Lastly, if you want something that's very low maintenance, give the pup what we call a "comfort clip" (often called a shavedown, smoothie, or strip down), which leaves the hair very short all over (anywhere from 1/8" or shorter, usually). However, with Am.Eskimo Dogs you have to be careful with clips that are that short ... they have sensitive skin and can be subject to sunburn easily.
Whatever you choose, DO be specific with the groomer. Don't just say "cut him short" ... that can mean different things to different people. To you, "short" may mean one inch, but to the groomer "short" may mean 1/8"! So use tangible measurements. "Clip his body to about 1/2", just neaten his tail up, and don't trim his ears please!".

My poodles are done on a weekly basis without any ill effects however I do have all the proper grooming equipment together with a proper dryer so they are bathed and fluff dried professionall. I would continue to brush your puppy on a daily basis so that she gets used to being groomed and bath her when you feel she needs it. I would wait until she has her adult coat before you start trimming her although you could carefully snip the hair off the bottom of her feet and from between her toes to tidy her feet up.

they only need to be bathed every 6 to 8 weeks. please do not shave or clip the hair of the dog it is a protection from the sun and the heat of summer. you can use baby powder on the dog to freshen the coat. when you bath the dog at home use only shampoo made for dogs
