They do. They got that star with the quarter moon. Otherwise idols and other such imagery is expressly forbidden.

The crescent was not the symbol for islam at the time of Muhammad (pbuh), usually the flag they used was blank. Later on, some started using the crescent as a symbol. People mistakenly believe this to be proof that muslims worship a moon God. The God I believe in is not only the God of the moon, but of the sun, stars, planets, and entire universe.

I thought the moon-and-star thing was it's logo, like the cross is Christianity's.

Because of idolatry. They idea that people would beleive that a symbol has sometype of power or grace giving utility.
