stirfry. dice the loin & fry first with a little oil, diced garlic & onion then stirfry veggies then add a little broth or water & simmer about ten minutes & serve over white rice.

Pork Fried Rice!

Here's the recipe:

2 large eggs
Salt and pepper, to taste
1 cup shredded Napa cabbage
1 cup roast pork, diced
1 tablespoon soy sauce
1 tablespoon oyster sauce
2 green onions, finely chopped
5 1/2 tablespoon vegetable oil for stir-frying, or as needed
4 cups cold cooked rice
PREPARATION:
Lightly beat the eggs with a small amount of salt and pepper to taste.

Preheat a wok or heavy frying pan over medium heat. Add 1 1/2 tablespoons of oil, swirling it around the pan or wok so that the entire surface is covered.



Add the egg, rotating the pan so that the beaten egg covers all of the pan. Cook until firm, remove from the pan and cut into thin strips.

Heat 2 tablespoons oil in the pan on medium-high to high heat. When the oil is hot, add the shredded cabbage and the diced pork. Stir-fry briefly, seasoning with salt if desired. Remove from the pan.

Heat 2 tablespoons oil in the pan over medium heat. When the oil is hot, add the rice. Fry the rice, stirring continually to separate the grains. Add the pork and the cabbage back into the pan with the fried rice. Stir in the soy sauce and oyster sauce. Stir in the green onion.

Remove the pork fried rice from the pan. Lay the cooked strips of egg on top and serve

FRUIT STUFFED LOIN OF PORK

4 lbs. boneless pork loin roast, cut
almost through lengthwise
1 c. pitted prunes
1 c. dried apricots
4 tbsp. butter, softened
1 tbsp. dried thyme
1 c. Madeira wine
1 tbsp. molasses

Preheat oven to 350 degrees. Open roast. On right hand side, place 1 prune and 1 apricot side by side. Continue until entire surface is covered. Close roast and tie. Rub with butter, sprinkle with thyme. Stir molasses and Maderia together and pour over roast. Set pan in middle rack and bake about 1 1/2 hours (20 minutes per pound), basting frequently. When done, remove from oven and let it stand loosely covered for 15-20 minutes. Cut into slices and pour pan juices over them.

Make hash. Boil potatoes. Chop potato and loin up into small pieces. Fry it up and serve with fried or scrambled eggs and some salsa or chutney.

Pork pot pie. Use recipe for chicken pot pie, just substitute pork.

Or make pot of baked beans and add chopped pork loin. Cook on low heat to allow meat to soften up.

shred that pork loin, add some strong spices like garlic and chilis, then make it a taco nite! sometimes i roll up shredded pork inside a corn tortilla, deep fry and viola, i have pork flautas and i serve with sour cream, salsa, spanish rice and refried beans. yummm!

I'd go with the bbq idea. Shred it & add sauce. Then put it on a roll, top with cheese & toast in the oven. Serve with cole slaw & fries. Yum!

slice it up dip in flour and fry until crisp. it doesn't take long b/c it's already cooked
