You can do a couple of things that I know work are
Try reducing the oil some, or it could be caused from over beating it, if you are using a blender do not mix more than a minute just enough To moisten all the dry ingredients, don't skip on sifting all your dry ingredients the sifting helps to evenly distribute the baking powder.

Moist Banana Pecan Bread

A nice, moist, nutty bread. Great way to use up the last of the bananas that have gotten overripe.



12 servings 1½ hours 10 min prep
Change to: servings US Metric
1/2 cup unsalted butter, softened
1 cup light brown sugar
2 eggs
2 medium overripe bananas, mashed
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon nutmeg
1/2 cup chopped pecans


Preheat oven to 325. Grease a 9" x 5" loaf pan.
In a large mixing bowl, beat together butter and brown sugar until creamed. Beat in eggs, mashed bananas, and vanilla until creamy.
In a seperate bowl, combine flour, salt, baking powder, cinnamon and nutmeg. Gradually add this dry mixture into creamed mixture and mix well. Batter will get thick.
Stir in chopped pecans.
Pour into greased loaf pan. Bake at 325 for 70-80 minutes.
Makes 1 loaf.

Less cooking time, less flour,more bananas, or more butter. All will help lighten up the bread. Also google light banana bread. It may give you a healthier recipe and then you can add sugar or butter to taste...but it will be less dry and heavy

here is the recipe that I have used for years. it is foolproof. Very moist (should cover with saran wrap when it cools).Bananas should be very ripe.

Banana Nut Bread (my recipe)

Mix together thoroughly
2/3 cup sugar
1/3 cup soft shortening
2 eggs

Mix together and stir in
3 TBSP sour milk (see recipe below)
1 cup mashed bananas (3 lbs =1 cup approx.)(Beat bananas to assure consistency)

Sift together and stir in
2 cups sifted flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt

Blend in
½ cup chopped walnuts

Pour into greased and floured 9” X 5” X 3” loaf pan. Let stand 20 minutes before baking. Bake at 350 degrees for 50 to 60 minutes or until it tests done (fork in center comes out clean).

Note- 1 cup grated apple (unpared) can be substituted for bananas to make Apple Nut Bread.

Sour Milk

Use ½ TBSP (1 ½ tsp.) apple cider vinegar to ½ cup milk. Let stand a few minutes. (For single recipe)

Add 1 TBSP apple cider vinegar or lemon juice to 1 cup milk. Let stand a few minutes. (Doubled recipe only)

ooooooooooooooooo this happened to me! i wasn't using bruised bananas. i was using nice fresh bananas. you're suppose to use over ripe black bananas. alsmost slimey. one christmas i made 7 loaves and had to give them out as gifts!! i sent cards suggesting they drink a gallon of milk with each loaf! lol hope this helps!

try adding some sour cream to the mix it will help with the dryness.
