I love to cook and I make my family happy when I do. But I gotta say I make this the best
Irish Stew
3 pounds lamb chops, trimmed of fat, bone and gristle
2 pounds potatoes (about 4 medium potatoes)
1 pound onions (about 2 medium-large onions)
1 tablespoon chopped fresh parsley
1 scant teaspoon dried thyme
2 cups water
salt and pepper to taste
Cut the meat into chunks. Peel and slice the potatoes and onions.
In a large, heavy Dutch oven or saucepan, layer half of the potatoes, covering the bottom of the pan. Then cover the potatoes with half of the lamb chunks, half of the parsley and thyme, and top with half the onion. Sprinkle each layer with salt and pepper. Repeat with remaining half of potatoes, lamb and onions, seasoning each layer with salt and pepper.
Pour the water over the top layer and cover with a tight-fitting lid. If the lid does not fit tightly, place a sheet of aluminum foil between the saucepan and the lid.
Simmer gently for about 2 hours. Shake the pan occasionally to prevent sticking (shaken, not stirred, so as not to disturb the layers). After about 90 minutes, remove the lid and add a little water if it seems impossibly dry, but remember that it should not be soupy.

The dish i cook best is Potato- Beef Bake.
1 pound ground beef
1 can sloppy joe sauce
1 (10 1/2oz) can Nacho cheese soup
1 (32 oz) package of frozen hash brown potatoes, thawed
*In a skillet cook beef over medium heat until no longer pink: Drain
*Add sloppy joe sauce and nacho cheese soup and mix well
*Place hash browns in a greased 9 X13 inch baking dish. top with beef mixture
* cover and bake at 400 degrees F for 25 minutes.
uncover and bake for 10 minutes longer.

I make alot of Mexican food but if you want something quick and easy this is a great pot roast I make often:
INGREDIENTS
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (1 ounce) package dry onion soup mix
1 1/4 cups water
5 1/2 pounds pot roast
DIRECTIONS
In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.
Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.

cube steak brown in fry pan with a little butter

2 16 oz tomatoes
tablespoon minced garlic

Chicken And Dumplings
INGREDIENTS:
(2-1/2- to 3-pound) broiler/fryer
2 Quarts water
1 Teaspoon Salt
1/2 Teaspoon Pepper
2 Cups All-purpose flour
1/2 Teaspoon Baking soda
1/2 Teaspoon Salt
3 Tablespoons Shortening
3/4 Cup Buttermilk
PREPARATION:
Place chicken in a Dutch oven or large kettle; add water and 1 teaspoon salt. Bring to a boil; cover, reduce heat,and simmer 1 1/2 hours or until tender. Remove chicken; let it cool slightly. Bone chicken, cutting meat into bite-size pieces; set aside.
Bring broth to a boil; add pepper. Combine flour, soda, and 1/2 teaspoon salt; cut in shortening until mixture resembles coarse meal. Add buttermilk, stirring with a fork until dry ingredients are moistened. Turn dough out onto a well-floured surface, and knead lightly 4 or 5 times. For drop dumplings, pat dough to 1/4-inch thickness. Pinch off dough in 1 1/2-inch pieces, and drop into boiling broth. To make rolled dumplings, roll dough to 1/4-inch thickness. Cut dough into 4- x 1/2-inch pieces. Drop dough, one piece at a time, into boiling broth, carefully stirring after each addition. Reduce heat to medium-low, and cook 8 to 10 minutes or to desired thickness, stirring occasionally. Stir in chicken.
Serves 4 to 6.

i just asked my kids what the best meal i've ever made and there was a two way tie. this is odd to me because i dont cook with red meat anymore! lol but here was their faves. meatloaf and beefmac n cheese, both homemade.
meatloaf:
2lbs ground round (i have four kiddos)
i dont measure the other ingredients...it just "feels" right..
chopped onions, clove of garlic, worcestshire sauce, ketchup,salt, pepper, crackers or white bread soaked in milk till mushy, minced bell pepper and 2 eggs. i mix this up with my bare hands (clean of course) and plop into a loaf pan. top the raw loaf with ketchup, spread it all over with your hands aswell. this is like playing with cow play doe! lol then i bake on 350 for 1hr. i serve this with mash potatoes and green peas, and rolls. NOW i substitute the ground beef with ground turkey. i dont taste the difference really.
homemade beef mac n cheese
brown your beef in a skillet with onions,garlic, cumin,salt, pepper, and 3tb. of your fave salsa or picante. simmer till cooked and while bot of water is boiling. prepare your elbow macaroni. (sometimes i cook fun shaped pasta). drain and put back into pot. at this point i turn off the heat. i scoop meat mixture into the pot with the cooked macaroni. then i add 2 cups of American cheese, and 1/2 cup of cheddar cheese. mix till a wonderful melted mess! my kids obviously love this!

chicken teriyaki with mixed veggies
marinade:
cup of white wine
cup of teriyaki sauce
cup of soy sauce
i refrigate bite size chicken piecs in this marinade for about 5 hours. heat the oil in skillet on med heat. throw in chicken.. half way through the time they cook throw in veggies (peas, brocolli, cauliflower, carrots, zucchini,etc) mix well, simmer for 10 min.. serve over white rice
