You can use wrapping paper to make squares for matching
use other paper to make shapes for matching
use cereal to count with or make pictures by gluing them
you can use box, cut a hole in it, add some familiar items, then have your child, stick there hand in the box, pick an item and have him guess what it is by strictly feeling the item.
Have him sort silverware, utensils, storage containers
count anything
take pictures of things and have him match the picture to the real object
sometimes just following his lead, he will give you ideas of how to take an activity he is doing and make it into a learning experience

One of my daughter's favorites is bowling. We use empty water bottles (the 20 oz size) and a rubber playground ball. Set up the bottles and let them roll or kick the ball to knock them down. Easy, cheap, and the kids love it.

Homemade playdough.
"Painting" with shaving cream on paper
Make noisemakers with boxes by putting pebbles inside.
Cut up finger foods and let her play chef and make a plate for you.
Make a tent out of blankets.
Dress up.

My 2 year old loves to throw laundry or plastic easter eggs into the clothes basket. I love that it teaches her to pick up and put things away.
