what is the total amount of weight you have been told to lose?
Don't diet, eat sensibly, have smaller portions and EXERCISE!!!
This rate of loss is approx 3lbs per week. You will find it evens out and if you have more to lose aim for 2ib per week. Good luck but hope you are not aiming for this ridiculous fashion of size zero??

Wow, that's really good going, well done you.
Healthy foods you can eat as much as you want of:
spinach (raw and steamed), lettuce, cabbage (all kinds), aubergines, courgette, butternut squash, carrots, mushrooms, tomatoes (all kinds), turnip, okra, peppers, onions, celery ... all these can be steamed, most can be stir-friend or oven-baked.
Foods which are healthy but which do have a slightly higher calorific value: All pulses (chickpeas, aduki beans, black-eyed beans, lentils, etc.), olives in brine, sundried tomatoes, potatoes, (without the butter or cream), parsnip, sweet potatoes, non-oily fish, fruit, porridge (add honey, or nuts, or milk, or raisins and cinnamon ... yum. The Breakfast Of Champions. A good feed of porridge in the morning sets you up till lunch), eggs.
Foods you can still enjoy but you need to watch the portion sizes: All types of pasta (if you cook your own lasagne, leave out either the meat or the white sauce), grains like bulgur wheat, couscous, lean meat, olive and other oils, oily fish, meat subsititutes like quorn, tofu, yoghurt, quark, wholegrain bread, bacon, sausages, black and white pudding, etc.
Foods that you can still enjoy, but you only have them occasionally: Cream, cheese, white bread, cakes, alcoholic drinks, fizzy drinks (these are the devil's own concoction. They are so bad for you. If you can cut them out altogether, you will be much better off for it.), beer, pancakes, maple and other syrups ... I think you know these now.
You must have worked so hard to lose so much weight in such a short time. I advise getting a good cookbook and educating yourself about the right kind of food to maintain your figure and your health. You're right not to want to be bored. Don't forget you can also experiment with herbs and spices to introduce a little pizzazz to your dishes.
