Is there a way to preserve the original taste?

My mom never puts bolied potatoes in the fridge. She leaves tem out for the night will put them in the fridge the next morning so when we eat them the next day they don't taste weird.

Your'e best not putting left over potatoes in the fridge. It makes them go rather 'slimy'. Just leave them out on a plate or bowl covered up.

Make sure the container is airtight or it will start to taste like everything else in the fridge

I believe my Gran would keep boiled potatoes under slightly salted, cold water, which would preserve the flavour and the colour.
