As with all well-known, classic cocktails, Pina Colada has been tried, tasted and amended by so many different people over the years, that every barman or mixologist will have their own recipe, slightly different from the next. I have developed mine over the years and got as far as this:

2 parts Malibu (or any coconut liqueur)
1 part Navy Rum
1 part white rum
1 part white crème de cacao
1 part coconut milk

Fill a slim-jim glass with rough-crushed ice. If you don't have an ice-machine for this, just wrap some ice-cubes in a clean cloth and smash them on a solid surface then just tip them out of the cloth.

Mix all the ingredients above with plenty of ice in a shaker and add 6 parts milk.

Shake for 5-10 seconds before adding 6 parts pineapple juice.

NB - if you haven't shaken the milk solution well enough it will curdle at this point!!!

Shake for a further 10-20 seconds and then loosely strain over the crushed ice.

Beautiful!

As far as a punch goes. Traditionally, this should be a fruity drink with no rules! Whenever I make a punch, The only thing that ALWAYS goes into it is fresh fruit.

Chop a lot of fresh fruit into your punch bowl and then pour in whatever you feel like. Try to make sure you mix things that will go well together and look nice too to make it appetising.

ie. Avoid:

cola + orange juice = muddy brown colour (not pleasant)
too many sweet or rich drinks = sickly and undrinkable.

I find that the best way to please everyone with a good punch is to use lots of citrus and berry flavours and a clean-tasting spirit like vodka or white rum.

For Pina Colada's I prefer to use a gold rum, like Mt Gay, and I really like them better on the rocks than frozen. Use
1 1/2 oz rum of choice
about 1 cup of pineapple juice
and about 1/3 cup of Coco Lopez
Shake.

Planters Punch, a basic rum punch
1 1/2 oz white rum, like bacardi
orange juice
pineapple juice
grenadine (some use cranberry juice if you like a less sweet taste)
don't shake, just let the grenadine sink into the drink,then
float about 3/4 oz of Meyers rum on top.

Spectacular punch eh? Well here's one I used to do:

Bottle of Pimm's No.1. Half bottle of gin. Half bottle of red vermouth. Cucumber peel & apple slices. Add lemonade to taste (not too much maybe one & a half litres) That always went down well, but so did some of the guests. So keep it away from the kids!

I make a tasty punch with Frozen OJ,Frozen lemon and lime aid,pineapple and ginger ale. You don't need to add water just mix everything together and add tons of ice. You can add sparkling wine if you want.

mix all togheder but not the pepper u need to crack some fresh over every drinks.garnish as you like.enjoy
