You will probably find that you are actually eating too little.
If you suddenly reduce the amount you are eating by an extreme amount your body becomes confused. If you starve your body when you are used to eating much more your body will send signals to store any incoming energy/calories as fat as it doesn't know when the next food will be coming. It is a natural alarm that the body has. This will also slow down your metabolism.
The best thing you could do is to eat little and often. This will keep your metabolism up which means that you will burn calories faster. This also means that you need to make sure that you eat breakfast even if you aren't particularly hungry. Breakfast should be eaten within an hour of waking up to bring the metabolic rate up to speed and to reduce the likelihood that any of the calories taken in later in the day are stored rather than being burned off. Have something like a banana for breakfast or a yoghurt.
Another saying which is very appropriate is "breakfast like a king, lunch like a prince and dine like a pauper". This is obviously dependent on whether your work pattern allows it. For example if you work shifts it may not be possible but assuming you work 9-5 (or not at all!) then the majority of your calories are taken in at the beginning of the day and this way you have longer to burn them off. When you have your meal at the end of the day close to going to bed you will not have too long to burn them off so they won't sit on your stomach during your sleep.
Cheese is probably best avoided but I assume that from your list you are vegetarian so this is where your protein comes from so just make sure you keep it to a minimum and I would suggest trying a bit more of a variety on your diet if you can. The list you gave sounds like it would get boring very quickly and isn't particularly balanced.
I also understand from past advice that going to the gym in the morning ensures that best amount of fatburning is done due to the fact that you have been 'fasting' during the night. The first thing you will burn off in any exercise is carbohydrates so if you exercise first thing in the morning before you have the chance to take in any carbs then you will burn off the fat first.
Good luck and stay with it but don't be too drastic. Losing weight has to be about changes in your lifestyle that are achievable long-term otherwise you will end up in the yo-yo dieting pattern. If you do it properly you won't have to deny yourself treats and things you like.

You are burning more calories than you are intaking. try eating a good balanced breakfast, a piece of fruit or some raw veggies as a snack, for lunch try something grilled, like chicken, and some veggies, steamed and raw are your better choices, eat another snack, popcorn is good as long as it isn't drowned in butter and for dinner have something light. stay away from cheese as it can cause constipation. Also water and green tea are great. You need protein in your diet it boost your energy level, try peanuts as a snack, unsalted. And since your going to the gym you might weigh the same but you've probably lost inches instead of pounds. You need to keep an eye on weight training before you lose the amount of weight you want to lose. Cardio is great. Treadmill is a great cardio.

You might not be taking in enough calories and thus putting your body into starvation mode. Still, sometimes it will take longer than 3 weeks for noticeable results. Also you might want to switch your gym routine around a little.

When you go to the gym, are you doing cardiovascular workouts? Are you breaking a sweat? If you're not gasping for breath and drenched in sweat for at least a half-hour or more, then you're not working out and you won't lose weight.
Also, stop eating the cheese. Also, are you cooking the veggies in heavy oil? If so, stop, and eat them steamed.

I tried almost starving myself too like that, and exercising, but I actually gained two pounds from that, and it wasn't muscle. So I tried eating good, filling, healthy meals, and cutting out all sweets except one sweet every other day, and exercising three days a week. I lost the two pounds I gained plus another two. So, at first I was at 113lbs, then i went up to 115lbs, and now I am down to 111lbs.

Are you doing any cardio at the gym or just weights? You should do at least an hour of cardio 5 times a week.
