can someone pleae help explain why bananas spoil and what causes this. Thank you.

The most common reason for banana spoilage is from enzymatic activity. There are certain enzymes (polyphenol oxidase that causes browning and amylase that turns starch in to sugar) that spoil bananas. These enzymes are naturally activated by the banana through respiration's by product of ethylene gas, or artificially activated through man made ethylene gas (which is just as safe). Like most enzymes, the enzymes in bananas are slowed down by colder conditions, but putting your bananas in the fridge might cause other problems like chill injury.
A less common reason for banana spoilage is microbial. Some molds and yeasts can cause bananas to spoil as well.

OK, banana's do keep longer in the fridge (they don't get as mushy) but they do get brown a lot quicker. Banana's are sprayed with chemicals to slow down it's ripening point. Organic Bananas are sprayed more (doesn't make much sense) I bought bananas that were sprayed too much and they remained green. I would shop around and see whos bananas are sprayed the way you like them

Did you purchase at supermarket or organic store? My supermarket spoil much faster because of chemicals and my organic bananas keep up to one week.

When either start to soften use in deserts or make a banana bread and it's healthy.

To miss "I'm here to help": NOOOOOOOOO! They do NOT go in the fridge.
Bananas need to be purchased in small quantities. When bananas age, they start to increase in sugar,to the point of instability.
Note: making banana bread still give you all the good things bananas have to offer.
I LUUUUUUV bananas... every which way.

because you put them all in your hair! jk no i dont know why but if you keep them in the fridge they last longer.
