Get her stuffed toys of similar texture..Dogs do this as a comforting habit, much as kid's thumb sucking..One of my dogs did that until I provided stuffed toys..I just get them at thrift shops, and cut off all plastic parts.
You have to be careful not to traumatise the dog about this..such as persistent scolding, as it is the same habit (OCD?) that can exchange for paw licking, which becomes a huge problem, as they often lick the hair off and injure the skin...so carpet, or stuffed toy licking is the far better habit..
Oxi Orange will safely remeove those stains..You can wash by hand or put a cup of Oxi Orange in a carpet shampooer.

Is she licking the carpet in one specific area? Maybe something has spilled in that spot. You could get a shop vac and wash that area, use some laundry detergent, carpet shampoo etc. you can suck up the water with a shop vac, and see if she stops after that.

they have special bitter spray that you can buy at you local pet store spray it on your carpet and when you dog licks it they spray will leave a very nasty taste in her mouth and she will not want to lick the carpet anymore
