Carbs are split into 2 catergories: Simple and Complex Carbs. Your Simple Carbs are your refined sugars (cookies,cakes,ice cream bascially anything that is high in sugar.) Your Complex Carbs are carbs that you find in vegateables and grains.These crabs help speed your metabolism and increases your immune system. These are the carbs you want to consume. Simple Carbs bad, Complex Carbs good.

Bad carbs are anything made with highly refined, processed sugars. (Think cereals, candy bars, many fruit drinks, etc) The highly refined sugar is absorbed by your system almost immediately....causing insulin production to suddenly spike, and that makes your body pretty much store everything to fat. Spiking your insulin also causes that "crash" later...if you've ever felt rotten or worn out by mid-afternoon, chances are you've had a rapid drop in your sugar because you ingested bad carbs earlier that day.
Good carbs are any foods that the body converts to sugar BUT IT IS ALL NATURAL, AND THEREFORE ABSORBED SLOWLY. Think carrots here. One of the stupidest things I've heard is that carrots should be avoided because they are carbs. Nope, God created carrots for the human body, and He always knows what He's doing. The fiber content in a carrot causes it to be absorbed slowly....therefore your insulin does NOT suddenly spike off the charts, and your body does NOT throw everything to fat stores. Also, you won't crash later from "good carbs".
I suggest you do a search on "low glycemic index" to get a comprehensive list of foods that are "good carbs", because that's really what you're talking about here. And you are WISE to recognize that not all carbs are created equal. Carbs are not bad, in fact we need them to live and have energy. It's just the form of processed sugars and foods we've converted them to that makes them BAD.

Basically, bad carbs are sweets and anything "white". White bread, white sugar, white flour, white rice. They've all been processed, refined and are basically lacking any nutritional value except calories. Good carbs are the "brown" ones and the ones in fruit, veggies and beans. Whole wheat breads and flours, brown rice, etc.
Watch out for high fructose corn syrup too. It's bad, bad, bad and it's in TONs of stuff now.

You have to eat a larger amount of complex carbs, such as flours or starch, that the one of simple carbs such as sugar.
Simple carbs raise the glucose level in a quicker way and at higher level during the peak, and they "wear off" faster, More complex carbs keep the glucose level "post-meal" or postprandial longer in the bloodstream, because they are large chains that are broken in the gut, absorbed and then kept in the muscles and liver as glycogen.

polished rice , pasta, refined flour are bad carbs. Good carbs come from fruits, corn, peas and pulses.
