I've got to cook 2nite as well, not a great cook by any means but I'm going to get some fresh chicken strips, fry them in a wok till cooked, add egg noodles, beansprouts and water horse chestnuts and a little bit of soy sauce. Takes a few minutes and tastes just like a chow mein.

try grilling or broiling the chicken... then either putting it in a salad... or making it with mashed potatoes... or grilled veggies... you could even bread it and bake it...
also... cut the chicken into small chunks... cook it in a frying pan with a little bit of butter... add cut up green and red bell peppers... make some ziti noodles... add the noodles and some spaghetti sauce to the chicken, peppers and ziti... and throw some mozzarella on top... and it's delish!!!!!!!!!!!!!!!!!!!!!
