I've been trying to figure it out fro two years but the chicken pieces always come out soggy when you put sauce on them or leave them in the air for too long.

Also the option of waiting to put sauce on is not part of the equation since you can get it from a chinese place covered in sauce and it stays crispy for hours.

Because it is served immediately after saucing. Ever get it on a buffet? It's usually pretty soggy after sitting there awhile.

Do not put the sauce on till just before you serve.

Try using a 50/50 mix of either cornstarch or potato starch with regular flour.
