I'm not a good cook either, but I found this recipe that I make often (it's a one pot meal... that's what I love!). It's very easy to make and tastes really good. So if you can get the ingredients then you can easily make this recipe. You basically just cook the chicken and then throw everything else in and stir.

Easy Mexican Chicken and Beans:
Ingredients:
1 lb chicken breast strips for stir-fry (i buy frozen chicken strips)
1 package (1.25 oz) Old El Paso® taco seasoning mix
1 can (15 oz) Progresso® black or pinto beans, drained, rinsed
1 can (11 oz) Green Giant® Mexicorn® whole kernel corn with red and green peppers, undrained
1/4 cup water
Tortillas, if desired

Directions:
1. Spray 10-inch skillet with cooking spray. Add chicken to skillet; cook over medium-high heat 8 to 10 minutes, stirring occasionally, until no longer pink in center.
2. Stir in seasoning mix, beans, corn and water. Cook over medium-high heat 8 to 10 minutes, stirring frequently, until sauce is slightly thickened. Serve with tortillas.

Make on omelette, get what ever veg u have and fry them off a little till soft, (you don't need much oil to do this) mix 2/3 egg depending on how hungry you are, mix the vege with the eggg and fry, when nearly solid but still a little soft loosen from the pan and fold out on to a plate. Yum.If you are going to add cheese do just before you fold out, and make sure you use grated cheese as you will use less. Yum I had this for tea last nite.

A nice mediteranian salad with lettuce, tomatoes, avocado, white onion, feta cheese or mozzarella and some sliced salami. Chop - put in bowl -add olive oil and balsamic vinegar and done - requires no cooking either.

Open a can of fresh tomatoe puree and put some on a fresh whole grain sub roll with a slice or two of low fat "farmer's cheese" on top. Microwave on a paper plate with another paper plate over the top to keep the microwave clean. You could add some canned mushrooms.

Use the Pita bread. Cut into half(pocket like) Fill it with your favorite foods. A kind of portion that would be healthy and just enough to fill and satisfy your hunger.

Sample morning- fill it up with sliced 1/2 banana and a a tbsp of peanut butter/or jam. How about slices of avocado, tomato and yogurt? Yummy!

Sample Lunch- tuna salad with diced apples, pickes, onion, mayonaise and horseradish. I love this!

Sample lunch-

Slapping the salami is defintely healthy as it will:
a) Strengthen your wrist
b) burn off calories
c) Release endorphins in your brain which naturally give you a high
d) Relax you
The best thing about it is you don't have to be a good cook!
Go and slap that salami, its healthy!
