Basque Pork and Beans - serves 4
2x 200g tins cannellini beans
600g/1lb 5oz diced pork
large onion sliced
3 large cloves garlic
400g/14oz chopped tomatoes
2 green peppers de-seeded and sliced
finely grated rind of 1 large orange
salt and pepper
finely chopped parsley to garnish
Cover the base of the frying pan with a thin layer of olive oil. Heat the oil on a medium heat.
Add the pork and keep turning till brown all over.Remove the pork from the pan and set aside.
Add the onion to the pan and fry for three minutes. Stir in the garlic and cook for a further two minutes.
Return the pork to the pan. Add the tomatoes and bring to the boil.
Reduce the heat and stir in the pepper slices, orange rind and drained beans. Add salt and pepper to taste.
Cover and cook on a low heat for 30 - 40 minutes. If there appears too much liquid remove the lid for a while to let it reduce.
Serve and sprinkle with chopped parsley.
You can serve with crusty bread, rice or cous cous.
Delicious. (Don't leave the orange rind out of the recipe it would surprise you the difference it makes.)

Try seafood lasanga In place of meat use mix of your favorite fish or seafood.use alfredo sauce.. Brown some ground beef ad a can of mushroom soup some fresh mushrooms .. buy a slow cookerso many meals in a pot . Iam married to a retired home ec teacher. go to campbellsoup.web site

Wednesday is sandwhich night. I am making meatball subby's.
1pkg subs (your choice)
3-4 meat balls per subby (I buy a bag of pre cooked meatballs)
1 cup spaghetti sauce per subby
Cheese of your choice.
heat sauce and meatball together
remove small portion of the subby to place your meatballs in.
pile on the cheese
place in oven on 350 until the cheese is melted.

cheerios i love them and its really easy
buy some at marcs or walmart
you put them in a bowl with a little sugar and a lot of
milk
its a wholesome and heart healthy meal

HEY I GIVE YOU A SIMPLE SOLUTION...
make a weekly menu..........this will make life easier
you can shop in advance for the week, you know what you have to make
so saves your time thinking and once in a week use the internet or cookery books for recipes and try them out.
ask your friends too....they wont say a no.
