Pasta salad with mozzarella and Tomatoes – Insalata di pasta mozzarella e pomodori
350 g (12 oz) short pasta (fusilli or penne)
7 ripe but firm tomatoes, peeled and cubed
85 g (3 oz) black olives, stoned
3 fillets of anchovies, chopped
4 tablespoons dried or fresh chives
2 mozzarella cheese, cubed or 20 cherry
mozzarella
12 leaves of fresh basil
12 tablespoons extra virgin olive oil
Bring to the boil abundant salted water and cook pasta according the instructions on the package.
Meanwhile prepare the dressing. Put all the ingredients in a large bowl and stir.
Cook pasta "al dente", drain it in the colander and run under cold water in order to stop its cooking. Add pasta to the mixture and stir well. Let chill at least 2 hours before serving but bring back to room temperature to serve.
Delicated rice salad – Insalata di riso delicata
8 hard-boiled eggs
1 360 g (12 oz) can bitter-sweet
peppers, drained
300 g (10 1/2 oz) boiled ham in a piece
8 tablespoons dried chives
10 tablespoons olive oil
6-8 tablespoons mayonnaise
550 g (1 1/4 lb) rice
salt
Prepare the ingredients. Cut the boiled ham into dice; cut the peppers into thin strips; shell the eggs and separate the yolk from the white for six of them (set aside two eggs for decorating); cut the whites into dice and mash the yolk with a fork; put all the ingredients in a large bowl with the olive oil and chives and stir gently. Meanwhile cook rice, as directed on the package, "al dente".
Drain it in the colander and run under cold water to stop the cooking.
Add the rice to the mixture in the bowl, season to taste with salt and blend in mayonnaise.
Cut into slices the two eggs and decorate the surface.
Let sit at least 2 hours before serving, or if chilled first, bring back to room temperature to serve.

My usual consists of mixed lettuce leaves, spinach, diced cucumber, halved cherry tomatos, sliced yellow and red peppers, sliced red onion. I use this as side salad and sometimes throw in a bit of sweetcorn or peas. The dressing used depends on what Im eating it with (ie to go with steak - coarse grain mustard, olive oil, balsamic or red wine vinegar, lemon juice, replace mustard with mint for lamb - you get the idea). Must admit Im not very adventurous and use these ingredients because I usually have them in fridge most of the time.

Obviously, there are any number of green salads--just add toppings of your liking--but if you're looking for something a little different, I like to make a sort of Greek tomato salad. I didn't list the amounts for the ingredients because it depends on how many servings you want to make--it works for one or twenty!You can pretty much play it by ear and eye and get good results each time.
Ingredients:
- Ripe plum tomatoes (more firm than soft) cut into bite-size chunks (Italian Plum Tomatoes are usually the best, but because they are not always in season, it's fine to use a different tasty tomato as long as it ripe, yet firm)
- Red Onions, thinly sliced
- Feta Cheese (try to find a good Greek Feta), crumbled
- Kalamata olives (good flavor and contrast to Feta).
- Dried Greek Oregano or chopped fresh Oregano
- Salt and Freshly Cracked Pepper to taste
- Virgin Olive Oil
- Red Wine Vinegar
• In a medium to large bowl (depending on amount of servings) combine the first four ingredients (tomatoes, feta, onions, olives).
• Sprinkle a generous amount of Oregano and a bit of salt and pepper over top.
• Drizzle Virgin Olive Oil over top and then a good amount of Red Wine Vinegar (I use plenty of vinegar--much more than olive oil--better taste and less fattening).
• Toss all ingredients gently, but well. Let stand a little bit so that the flavors have a chance to meld.
• Serve.
I find this to be a nice change to a green salad and goes very well with just about anything--fish, beef, lamb, chicken, whatever!

Mine is a mixture of romaine and butter (or bibb) lettuce, tomatoes, scallions for a side salad. For a main dish, I'll add boiled eggs, cold meats and cheese, julienned. I love it with freshly grated Parmesan, a touch of garlic and onion powder, salt, pepper and a drizzle of vinegar or lemon juice and olive oil.

Sliced tomatoes, sliced onions and sliced mozzarella cheese arranged on a large plate. Scatter chopped garlic over this. Sprinkle with olive oil and lemon juice and season with salt and pepper. Cut a couple of not too hard hard boiled eggs longways (not slices), shake some hot paprika over them and add a handful of black olives. A bottle of chilled rosé goes down well with this. Wait til the weather gets a bit warmer and you'll love it.

5 types of lettuce but mainly Iceberg, cucumber, celery, water cress, tomato, apple, spring onion, radish, yellow pepper, beetroot, grated carrot, some homemade coleslaw (sometimes potato salad dependent on choice) a drizzle of balsamic vinegar, some crumbled apricot stilton and a couple of pieces of finely chopped cold chicken.

It really depends on what I have a taste for. Most days it's iceberg, romaine, spinach, tomato, cucumber, black olive, and shredded cheese. I also like:
spinach, walnuts, bleu cheese, & dried cranberries (sometimes with chicken)

I'm eating it right now !!
I use a whole pack of the Ainsley Harriotts Cous Cous (spice sensation) 30 secs in microwave. I mix in shredded iceberg lettuce, diced cucumber diced tomatoes and advocado its lovely !
