Peel and cut into 2 inch pieces, par boil in slightly salted water and then scrape each potatoe with the prongs of a fork before placing in a metal oven dish which has been pre heated with hot oil / butter. Place in oven (fairly high heat ) - sprinkle a tiny bit of sea salt over them and bake for about 30 minutes ....deeelicious!!

Pretty much as the others have said, peel them and cut them into half or quater depending on how large they start off as. Par boil for a max of 10 mins. Drain the water and give them a shake to make the surface go fluffy. Have some pre-heated goose fat in the oven and put the spuds into the tray making sure you cover them in the fat. Roast until crispy on the outside (something like an hour depending again on their size) turning once during the cooking.

I peel my potatoes, then cut them to the sizes I wish to cook them.
Then I have found the best thing is to put them on a plate and cover them with foodwrap and put them in the microwave for about 4 minutes to partially cook them. This removes the toxin which raw potato gives off when put straight into oil etc.
Then heat the oven to about 120C. Put the potatoes in a roasting pan and tip some olive oil into the pan.
Then using your hands mix the potatoes so they are completely covered in the oil and then cook very slowly and turn them often.
About 30 minutes before serving turn the oven up to about 400C and let me crisp well.
This is no fail and just brilliant.

The potato, the potato, the potato. Use a good red such as Desiree or King Edward, par boil them first, then into the oven with oodles of oil or lard (fat from the roast is best) at 200C for ~40mins (electric fan assist), alternatively put them in the roasting pan along with the meat which works well with pork or lamb.

Don't peel the potatoes, just quarter them if they are large.
Place in a pan of cold water and bring to the boil. Boil for 2 mins.
Drain the potatoes and put them back in the pan.
Add 1 tbs of olive oil, put the lid on and give it a good shake.
When thouroughly coated in oil, place the potaotes in a roasting tray, sprinkle on some dried Rosemary and roast in the oven Gas 9 for 35 mins.
Very crispy, very delicious and Very LOW FAT.

Put the Roasting tin in the oven (with no oil in it), whilst boiling the potatoes for about 10 minutes. Then Drain the potatoes and add a table spoon of oil and mix with a wooden spoon so that they are covered and then add them to the hot roasting tin... Roast for about 40 mins at 220c... This way the potatoes are not cooked in excessive amounts of oil.

Do not boil first but do peel. Pre-heat the oven to gas mark 6. Place in a baking tray, drizzle with olive oil cover with mixed herbs and salt and pepper. Try roasting other veggies at the same time like carrots, parsnips and shallots. Try placing a whole clove of garlic in the tray, this will flavour the food without being to strong.

The potato is important, Del Piero has the right idea.
Par boil them for 10 mins, drain them, then give them a quick shake in the pot.
This roughs up the edges of the potato.
Then put them in a roasting tray of VERY hot oil, spoon the oil over the potatoes and roast until really crispy basting occasionally
And make sure you serve them immediatly, leaving them for too long makes them soggy.

The secret is HOT oil! It seares the outside of the potato converting starches to sugars which caramelizes the potato giving it that extra special flavor!
PS: A word of caution- Just be very careful when working with HOT OIL!!!! Carelessness will result in "remolding the kitchen" or even possibly the newest home (s) on the block!

Par boil the potatos then drain them then shake the saucepan so they bang about this will fluff them so that the oil absorbs in them to make them crispy, then put them in hot oil in a baking tray shake some vinegar on the potatoes and then spread a little marmite on each potato then bake them in the oven on a highish heat about 200 until crispy - gorgeous! and you cannot taste the marmite if you don't like it it just gives the potato a wonderful flavour
