No, seriously! I am supposed to be cooking for my man tonite but I dont know what! I want something different like a stir fry tho he doesnt like that that doesnt cost too mcuh money and suits fussy people! Its our anniversary so I want to make it special! Plese help! Thanks xx

If its a very special aniversary and you are very much in love you could go to Burger King together. Wimpy's and KFC are also good for such a special day.

Anniversary = three course dinner, and to make it cheaper and easier reuse the same ingredients throughout the dinner.

Course 1: Bruschetta
Make up a salsa with chopped tomato, basil, rosemary, chopped walnuts, pinch of salt, olive oil.
Chop up a baguette, spread each with avocado then add the salsa. For fussiness, put some cheese on a couple of slices, and ham plus cheese on some others.

Course 2: What you know to be his favourite dish
Whatever it is - if he's fussy, the main has to please. If it's a steak, rub some garlic on the sides and then grill for 2 minutes each side.
Keep some salsa (without walnuts) and you can use it as a base for a pasta sauce - just add some browned mince with a bit of chilli powder, and then boil up some spirelli. You can now serve steak with a side of pasta.

Forget vegetables. Seriously. This is supposed to make him happy.

Course 3: Parfait
Tall glasses: Put the following ingredients in order from bottom to top - hot chocolate fudge, vanilla ice cream, walnuts, cookies and cream ice cream, hot fudge, marshmallows, vanilla ice cream, his favourite candy bar chopped up, then whipped cream with the remainder walnuts and hot fudge.

Course 4: Etc
The remainder whipped cream. Don't waste it :-)

i like the steak idea that someone suggested. also you could make some spaghetti bolognaise - always a favourite :)

but when i am stuck i put together this combination of a main + salad:

MAIN - GARLIC PRAWNS:

1. Heat a large skillet over medium high heat.
2. Add olive oil, garlic, red pepper flakes, and shrimp.
3. Season with grill seasoning or salt & pepper.
4. Cook shrimp 3 minutes or until just pink.
5. Toss with lemon zest, juice, & chopped parsley.
6. Remove shrimp to a serving platter, leaving the garlic cloves in the pan.

SALAD - ASIAN CUCUMBER SALAD

1/4 cup seasoned rice vinegar
1/2 teaspoon sugar
1 teaspoon soy sauce
1/2 teaspoon sesame oil
1 1/2 English cucumbers, halved crosswise (1 1/4 lb total)

1. Bring vinegar and sugar to a simmer, stirring until sugar is dissolved, then cool to room temperature. Stir in soy sauce and sesame oil.
2. Cut cucumber lengthwise into 1/8-inch-thick ribbons using a mandoline or other manual slicer. Toss cucumber with dressing and let stand 5 minutes before serving.

Start out with a nice garden salad with your favorite dressing. Follow that up with a glass of Merlot or Chablis wine. Then serve a minestrone soup. For the main course, serve spaghetti and meat balls w/sauce w/assorted peppers, onions, mushrooms. Dessert? Try a peach parfait or strawberry shortcake...& more wine. Last, have coffee ready if he wants some before you retire to the sofa. The cost should be reasonably inexpensive for all, less than $15-20.00.

how about something baked like lasangna or some mixed vegestables covered with a layer of grilled cheese? u can easily make that. search for the recipe of some dish on the internet. that's the least u can do.

can you tell us what he likes?

get a takeaway. its lot easy. better than getting oyurself stressed. you can get takeaway for under £15.
its still gonna be special as u just have to lit the candles on table, put petals all over the table.

for my anniversary or any speacil day ie valentines day,

i make pilau rice, chicken bhuna, tarka dhal.
i make my own curry as it comes out nicer

After reading everyone elses answers, i've gotten very hungry myself...LOL I'm going with Diane's answer for tonight's dinner, steaks on the grill, baked potatoes, salad sounds very good to me right about now!
