I've got mixed answers to how long, and at what temperature I need to freeze salmon to ensure all worms (parasites) have been killed off thus making it safe to eat raw (as sushi)...

I want you to tell me, preferably linking to a .gov website, but any reference, or just experienced person's answer will be nice.

When you freeze the salmon the process of freezing kills the parasites. When you buy salmon from the grocery store it sometimes has already been frozen so it all depends on if it has been frozen or not. We put our salmon in the freezer and when we feel like making sushi we pull it out and then slice it up and we have never gotten sick. So, I wouldn't fuss about it too much. Just make sure you handle it properly!

CONSUMPTION OF RAW SEAFOODS

Raw Seafood Concerns:

Eating raw fish or shellfish is the most frequent cause of seafood-borne
illnesses. These raw foods carry bacteria and other contaminants that may be
harmful to consumers. This eating preference is of particular concern for
consumers with health conditions that impair their health defense systems.

Live oysters and clams filter enormous amounts of water to obtain food. This same
water may contain potentially harmful types and amounts of bacteria and virus
that can concentrate and survive in the shellfish. Mishandling of the
recreational harvest can further contribute to the growth and survival of
bacteria.

Similarly, some live fish can carry parasites which are part of the natural
ecology of the marine environment. In most instances these marine parasites are
not harmful to humans and are simply destroyed by human digestion. Although the
occurrence of a marine parasite infection in humans from eating raw fish is very
rare, the unpleasant thought of eating a parasite is enough reason for caution.

You could never get a regular refridgerator that cold. It's like negative 7 degrees or something like that. Sushi bars and supermarkets have special freezers for this purpose.

Unless you're a sushi expert chef, or you have a freezer specifically designed for such a purpose, I wouldn't experiment with parasites...
