The Bible says we are created in God's image. I think this means that God's higher qualities like justice, love, mercy etc., were given to us when He created us. He also gave us the ability to create, like Him. Aside from that, I think there certain physical things that would be literally made in his image, like hands, a face, legs etc. We are His children, chips off the block of the Most High God of the universe! What an awesome God and Father!

In answer to your first question,When man was created 'in God's image',it means that humans were made with the potential for being like God,possessing the outstanding qualities he has, including wisdom, power, righteousness, and love.
Secondly, consider the fact that Jehovah God made the sun,for example. The power and energy that would require? How close could you get to the sun before you exploded? So no it is not a metaphor. It is literal.Even Moses only caught a glimpse of the back of Jehovahs glory and yet his face was burnt.

God the Father has no physical body. He is pure Spirit. We are made in His image means we are rational, thinking individuals. No one has ever looked upon the face of God. Moses himself couldn't .Jesus, the Son, however, does have both body and Spirit. He is the physical God (word) made flesh. It is definitely not literal . We are made in God's image is a literary device.

I have read nothing that gives a physical description of God in the Bible and I think I know most of it pretty well. He is a spirit. I believe that it is our spirit that is made in his image, not our physical body.

I think that we wish we knew. But here is a rendition of that, to try to explain it the best I can:
God has a Spirit, Mind, and Fleshly body. We were created in that image. Try to reconcile the flesh with God. It is said that Jesus was the Lamb slain before the foundations of the Earth.

I'd say both physical & mental because, I seem to remember Moses or someone like that seeing God and aging quite a bit after seeing His face. I guess that's because the further we are away from God, the more overwhelming it is to see His actual face because He's divine and we're not. This is just my opinion, not fact or anything!

Whats so special about human beings that God created us in his image? I just wonder, out of the billions and billions of stars and galaxies out there, surely there must be some other form of intelligent life.. If there is, then what does that mean for human beings and their God?
I think people believe what they choose to believe. We were all pagans before... if the pilgrims didnt come to America, we'd all be worshipping different gods...
So i think there is no answer to your question.
