i want soft and chewey cookies, even after they are one day old....thanx!

I think that if you don't cook them as long they are softer, otherwise idk, dont make them under cooked!!!

First thing to know is under cook a cookie 2 minutes to allow cookie to continue baking after they are pulled from the oven..Items I use as a professional chef/baker is inverted sugar
(honey or maple syrup or combination of) This will keep the cookie soft and pliable. For some reason the cookies dry out and start getting hard, add a slice of bread in the bowl and cover. Should be ready to go in the morning.

Place cookies in sealed plastic container (Tupperware). Put a piece of fresh bread in the container with the cookies. The moisture in the bread will keep the cookies soft. The next day, the bread will be as hard as a brick, but the cookies will be soft.

Look in the baking area of the grocery store for "fructose". This is a sugar varient (follow the instructions...use much less fructose than sugar). Anyway, replace the sugar with the appropriate mount of fructose and your cookies can stay soft for a long time. This works really good with most choco chip & PB cookie recipes.

Make sure you have lots of moisture in the recipe. I have a cookie recipe that calls for a Tablespoon of water. That plus an egg and butter that's fresh makes it soft and chewy. Make sure you don't cook them too long or you cook all the moisture right out of them.

The best way to get your cookies soft and keep them that way is to take them out of the oven a few minutes sooner than you are supposed to. Even up to five minutes sooner. Then store them in an airtight container.

Put a piece of bread in the cookie jar with the cookies, they will get soft again.

The answer is to use part brown sugar in the recipe!

Put a piece of bread in the bag / bucket you are storing them in. The moisture will be sucked out of the bread and into your cookies! It really works--even if you over bake!
Also... I usually under bake.

Underbake them by a minute or two. Remember they will continue to bake for a bit when you take them out of the oven. You might also want to try storing them in an airtight container with a slice of bread.

Add a spoonful or 2 of light corn syrup to the dough while you're mixing it up. helps the cookies retain moisture
