"Cropping" in photography means digitally cutting out a portion of one picture to create a new picture.
It is often used to improve the framing of a pic, or to capture and enlarge an interesting section of the original image.
Because cropping only takes part of the pixels of the original image, the resolution of the new pic is smaller than the original pic. So the amount of possible enlargement is smaller too.
If you want to do a lot of cropping, get a camera that takes the original image with a lot of mega-pixels.
