If you see a meltdown about to happen you can make them aware before it happens. Sally, I see you are getting upset at Jim not sharing. Why don't you get out the lacing cards until he is done." Or, "Sally, if you are getting angry at Jim why don't you go and tell him that he is hurting your feelings."

Modeling appropriate behavior. If a child is being rude or nasty step in and model nice behavior to the friends. Brag on the chldren who are being kind and good friends.

In a classroom where the rules are clear and consistent you don't have too many behavior problems. If you do, they know what the consequences will be.

You just answered your own question... you have to anticipate what they are going to do, and prevent it from happening by redirection. If you see that one of your children is about to bite another child, you move between them and find something else for the child to focus on. You have to know the personalities and quirks of the children in your class, and be able to anticipate their every move. It takes intuition and time. You have to learn all kinds of redirection tricks, from a new toy to jumping into song.

If you see one starting, try to re-direct the child to doing something better. If not possible, give them warnings of what will happen if they keep going the direction they are going.

distraction...give two acceptable choices.
physical..pick them up and move them.
