Yes, you will gain it back. Your body will go through starvation mode, and will start producing ketone bodies. When you finally do eat something, it will store it instead of using it because it "doesn't know when it will be fed again." Trust me, you do not want to only drink water for a week. You will be weak, and you'll gain it back anyway. If your diet isn't bad, then perhaps increase your workout regimen? If your diet and exercise are both healthy, and you don't have a hereditary condition, you should be fairly thin.

You cannot lose weight safely if you are just going to drink only water. Yeah you will lose a lot but when you go back on your normal diet you will gain the weight back and gain more than when you started. Basically the body is protecting itself from going into a starvation mode. It will slow down your metabolism to protect yourself. Then you eat normally and your weight comes back on. This is not safe at all, not to mention you are starving your body and brain from the food it requires, protein, good carbs, vitamins, etc..Not smart!

Seeing as how water is 0 calories, and your body needs 1000 for basic maintenance, I think if you only drank that for a week, gaining back the weight would be the least of your problems.
