I always wondered why too. Maybe because it was prophesy for him to stay that long. If everything is true about Him being the Savior. then I would have left a lot sooner. But I guess he had a job to do and he stuck with it until his end of life.

He was about thirty as we figure it. I have heard many reasons and I believe the fullness of time about covers it. I also have heard that in Jewish custom he had an obligation to his mother to provide for her after Joseph's death ( at least most believe that is what happened).
Another thought is that he needed to let John the Baptist's message sink in. Remember he was only a little younger than John. Since John was his messenger it is only polite to let him go first. A little tongue in cheek but it is a valid reason.
You will hear many say that he went to India and that sort of rumor. But, the simple fact is that he knew his Fathers business and that is all that is important.

Scripture speaks of Jesus as the Lamb slain before the foundations of the world.
God gave man free will, so he had to wait for the right time for all things to come together.
Here's what the Church says about it:
"Jesus handed over according to the definite plan of God"

God has an appointed time to fulfill his prophecies.
Habakkuk 2:3
For the revelation awaits an appointed time; it speaks of the end and will not prove false. Though it linger, wait for it; it will certainly come and will not delay.
Timing is very important to God
6Whereupon Jesus said to them, My time (opportunity) has not come yet; but any time is suitable for you and your opportunity is ready any time [is always here]. John 7:6
We can speculate as to the reasons, but only God knows the correct timing for things.
