I would like to cook some lima beans and I know I probably have to soak them first before actually cooking them.How long should I soak them first and how long should i let them cook?

You don't have to soak them. Just rinse them off in a colander & then put them in the slow cooker w/ plent of water & salt, and let them cook till they're tender. It's that easy.

INGREDIENTS:
1 pound dried lima beans, soaked overnight, drained
2 large ham hocks, or 4 small
2 bay leaves
1/2 cup chopped onion
1 green bell pepper, chopped
2 cups chopped tomatoes
1 cup tomato sauce
1 teaspoon sugar
1/4 teaspoon ground cloves
1/2 teaspoon pepper
salt, to taste
PREPARATION:
Place beans in bottom of Crock Pot and add remaining ingredients with 1 1/2 quarts of water. Cover and cook on high for 2 hours. Turn heat to low and cook, covered, 9 to 11 hours.

Usually an hour or two.But why would you want to soak 'em if you are going to use a crockpot ?It will do the work for you !! Just make sure you WASH the limas several times in cold running water to remove any residual pesticide. Personally I use "VeggieWash". It's at your local grocers and not terribly expensive.

i just bought a bag of dried white beans. it should say on the back of the bag. some of them, you dont have to soak at all, especially using a slow cooker.

lima should soak over night and cook all day on med.

Until they are soft, about 6-8 hours.
